San Diego recommendations
Not Japanese but Fish 101 in Leucadia is awesome. Owner knows all the boat captains and they get the freshest fish, like were swimming earlier in the morning. Yellowtail (when in season) is my go-to when I’m out there.

Cheese Enchiladas
Edit to the above - we used corn tortillas, not flour called out in recipe. Just saw that and was like WTF? Flour? That’s damn burritos. Sauce recipe is top drawer.

My bride whipped up these awesome chicken enchiladas tonight. With that said, this recipe may unseat my stand-by Robb Walsh chili gravy. It uses 3 Tbs of butter in lieu of oil and a small amount of tomato sauce and some sugar, otherwise, it is very close to Rob Walsh recipe. Unbelievable good.

Chicken Fried Steak
Junior and I ventured over to the Ozarks east of Tahlequah for some smallmouth bass fishing. This unseasonably cool weather unfortunately turned the fish off and we only caught a couple of small fish. We made up for it by swinging by the only Del Rancho in Eastern Oklahoma in Tahlequah. So dang good and CFS dinner with two sides for $13.01 (.01 LOL).

8/1, it’s time for the Hatch Chile thread
Hey! The green chile thread…how us old, fat asses mark the time these days! My buddy in Albuquerque told me that he had a new favorite green chile cheeseburger in the state, his old favorite being at the Mine Shaft Tavern in Madrid, I knew I had to take him seriously. He said it’s at a restaurant in downtown Capitan, NM called Oso Grill. I’m never down that way anymore, so I’m counting on one of you dudes to check it out and give a report: Fried green chile strips as app: CFS looks bad ass too: Right across the street from the Smokey the Bear park (my kids used to love that place).

Cheese Enchiladas
Wife is out of town with my daughter, son is at Grand Lake with friends, and the dogs and I are holding down the homestead. Cheese enchiladas were calling for me but I didn’t want to cook a batch by myself. Y Mas is seven hour drive, praying that Chili Parlor stays in business, and the golden memory of Dart Bowl is fleeting. It’s been a while since I hit El Rancho Grande on 11th Street in Tulsa (open since 1953) as last time was a little off. With that said, they were on point tonight with the finest plate of old school Texas Mex cheese enchiladas I’ve had since eating in a bowling alley on Grover Ave. Ladies and gentlemen, the Night Hawk plate (I inquired if name had anything to do with Nighthawk in Austin and waiter had no idea). Onions were inside the tortillas but next time I’m requesting more on top.

2025 Thread of the Rains
I’m up in Colorado picking up my youngest, a teenager, from camp. The camp director of the Colorado camp broke down in tears at the closing ceremony today and they had a long moment of silence for all the kids and staff lost. This has absolutely gut punched me as it seems like a blink of an eye we were taking our daughter out to camps in the Hill Country when she was the age of these precious little girls. I’m sure we know someone affected as we lived in Austin for fourteen years and thirty in Texas overall but haven’t heard anything yet. Saying that, I’ve never had anything affect me the way this event has…physically ill with sadness.

I had no idea my wife had a sister…- Ardmore, OK
Lake Murray south of town is nice. Dornick Hills CC is a great track if you get a chance to play golf there. A buddy of mine lives not too far from Ardmore and says Cafe Alley has excellent food. Aforementioned Turner Falls north of town is cool. Other than that, I’ve got nothing. The kid and I got out a couple of times in April to some lakes and streams about an hour east of Tulsa. Early in the month, we hit one of my old haunts that pours into Fort Gibson Lake looking for some sandbass with none were running. However, we were surprised by smallmouth in a stream that I had previously only caught spotted bass and LMB: The prior Sunday, we tried again looking for hybrids and sandbass. There were a few small male sandbass but no larger females and no hybrids. We tried a nearby lake and caught a drum on a fly. First one for me in freshwater.
