Can verify the Round Up. First job after BBA 1978 UT was in the valley for 2 years. Ate there many times and was the best fajita meal I've ever had. Coldest beer in the valley. Moved to Dallas and On The Border started serving them a number of years after but couldn't touch the Round Up.

'76 grad. Went to last 2 years at Clark Field. When Disch opened, we sat on 1st base side with the Wild Bunch, mainly rowdy law school students. The opponent harrassment from those guys was epic. The other team would throw spit cups back up in the stands, that sort of thing. Good old days.

Fajitas were introduced to Texas from Mexico at the Drive Inn restaurant in Pharr. It was an old drive inn converted to an inside restaurant. I did some work in the Valley in 1978-79 and this place was famous for them. It was popular in Mexico and I had them in Nuevo Laredo around that time. They later got discovered at On The Border in Dallas a few years later.
