May 22, 20205 yr Over 1 pound of minke whale. It's very very lean meat, so I had a buttered pan with some garlic and shallots to baste or soak the meat, and also balance out any mild gaminess. After a few minutes reaching 80*, finished it inside the pan until it went to 110*F. The thin cooked rim of whale tastes metallic and like canned tuna in water. The interior is just something between beef and venison, mildly sweet and not exotic at all. Next time I will try it tartare Fuck you, whale! And fuck you, dolphin!

May 26, 20205 yr There are a lot of cases where freezing meat makes it a lot easier to process with power tools or saws, and much cleaner. I've not done it to a tenderloin but have done it to break down other large cuts.

Some good, but mostly not good (substituting something that's not even close to what you wanted, weird quantities, out of stock items, etc). This 1.63 lb ribeye was one of the few good surprises... I'll report back when I cook it. Unless I fuck it up. Then I'll just say it slammed and went so hard that I didn't even have time to get a pic.

I normally just go by feel with a steak, but at damn near 2 lbs and 2 inches thick, this thing required a meat thermometer. Patagonian Toothfish for the wife. Martinis were flowin... Nice little Caesar salad with some homemade croutons... And, as usual, the star of the show was the mac n cheese (also did a bread basket and a shrimp cocktail, but I didn't get any pics of them). This was just a huge bowl of cheesy noodle awesomeness... Back to the steak, seared it on the griddle... Took what seemed like forever to cook and rest, but here's the finished product... And here's her sea bass. Yes, I cut her lemon into a flower. Happy wife, happy blah blah blah. Come at me... Plated with some mac n cheese... And just so I don't get called out by the surly steak mafia, here's the money shot. Nailed it (thank you meat thermometer)... Did I mention the star of the show was the mac n cheese...

June 14, 20205 yr Prime ribeye last night. Didn’t take a moneyshot pic because once I started I chowed it quick. It was unreal. And watched “The Jerk” on the boat. I was a happy man.
