Pulled out my Y2K stash and am currently cooking a pot of 21 year old beans.  They look fine, we'll see?

Can I have your watch when you are dead?

These were dry pintos I simmered all afternoon.  Just ate a big bowl, wish me luck!

I cooked some 1 year old beans last week and could never get them to soften up. Ended up mashing them and making refried. I figure 20 year old beans would be like eating gravel.

I heard they last forever but at some point, no matter how long you Soak them, you can’t make them soft.
I was younger then obviously but dont remember doing any prepping at all for Y2K

They did not get soft after simmering four hours.  I thought it was my cooking until I read your comments.  Next try is 21 year old rice.

How were your beans stored?  I'm going to try mine that have been stored indoors for 5 years in sealed mylar bags w/ oxygen absorbers inside 5 gallon home depot buckets w/lid.

The bags claimed up to 20 years, but i'm sure that's only for certain foods and in a cooler dryer place than I have.

Stored in half gallon plastic juice jugs, under the bed in the guest room.  Got a pressurized "poof" when opened?   Very little intestinal distress?
