Brioche bun, Hutchins turkey reheated in bacon grease, bacon, japs and not pictured is the Twinkie. Drizzled a little Hutchins bbq sauce on it.

I'm making meatball subs tonight.  I have the meatballs figured out as well as the tomato/marinara sauce.  It feels like meatballs, sauce, mozzarella and parmesan is a little lacking.  Any recs on a relish that has worked for you in the past?  I might just saute up some peppers and onions.  Or fresh basil?

Maybe occurs other places too but in the Bay Area leaving late night after Giants games and concerts, there’s always several folks grilling bacon wrapped hot dogs with carmelize onions and peppers on flat tops and it smells and looks amazing.

They do them after the longhorn and Austin FC matches. They’re glorious. Theyre also $10.

So I smoked a tri tip on Sunday, which turned out perfectly. Wife is out with a friend tonight, so made this tri tip Reuben with havarti, sauerkraut, horseradish, and thousand island. Damn if it wasn't one of the best 6-7 sandwiches I've ever had.

Maybe occurs other places too but in the Bay Area leaving late night after Giants games and concerts, there’s always several folks grilling bacon wrapped hot dogs with carmelize onions and peppers on flat tops and it smells and looks amazing. 

They have people grilling them up after each night at Kilby Block Party in SLC last year. They smelled and looked great at 11 pm. I’ll snap a pic if they’re out there again next month. (The pic above look a lot more cheffy than the SLC dogs.)

I feel like I also saw some outside DKR following the Kentucky or Clemson games last year.

I just bought a meat grinder today.  So I'm now thinking about grinding up one of those corn beef briskets with some chuck for Reuben meatloaf, Reuben burgers, hell, Reuben sausage.  I'm sure I'll screw this up somehow.
