Did a little day trip to Galveston for Mother’s Day, and packed some sandwiches for lunch. Mayo, turkey, ham, bacon, harvarti, onion, lettuce, and sun dried tomato pesto.

Looks great.

Very good move using the sun dried tomato paste instead of tomatoes to prevent sogginess.

I mixed cream cheese with the sundried tomato pesto after consulting my dad (the OG maker of this sandwich) and good God it cranked this sumbitch up to 11.

I am pleased to report that I made the same pot roast grilled cheese sandwich with Dijon mustard and horseradish but this time also a side of au jus to dip it in.

I was thinking about doing just a straight tomato sandwich. Might have one tomorrow for lunch.

just because your poor dad made a mater sandwich and it happened to be during the depression does not make it a depression food.

Where did I say it was depression food. I see no shame in po folks food.  No shame in elevating a mater sandwich with some bacon grease; it’s straight up 1935 Texas.

Funny - my wife just made me throw out my "drippings can" because it started to spoil. It was meat drippings that I kept in the pantry. Start a new one in the morning!

This has been a menu staple at Republique in LA since it opened and, IMO, you really don’t need much else.

These pan drippings are caught at the bottom of their rotisserie, and with butter and bread you’re telling the food pyramid to go fuck itself with a smile upon your face.

At a company dinner in Denver we were at a seafood place downtown. They had a bacon steak as an appetizer.  A colleague ordered that with a side of melted butter they serve with lobster.  A hunk of bacon dipped in butter.  I them ordered one too.  

Lobster Roll from a recent trip to Martha’s Vinyard, they stuffed it with plenty of lobster which surprised me…

every now and then I get a craving for this.  My grandmother used to make them when I was a kid.  All the cheap ass Buding meats along with swiss and dill pickle and mayo and mustard on cheap ass grocery store french bread.

Swiss would have been decidedly better but was unavailable. Considered using the kid’s mozzarella sticks and thought better of it, likely to my own detriment.

I think the bread is ok, but I would have hollowed out the top piece and doubled the beef. 
 

But I’m an unabashed carnivore. 

That's all the beef that was leftover, and that's the best bread my HEB has - especially in a limited quantity.  I did toast the ingredient facing side as well.  Those bolillo rolls are pretty tasty.
