September 5Sep 5 Anyone had cheese enchiladas at Taco Shack? That little round aluminum to go plate full of enchiladas, gravy, rice and beans is so good.

September 6Sep 6 I like an extremely cheap cheese enchilada. The ingredients probably cost the restaurant about 10 cents per plate. Therefore, the Los Tios Birthday enchilada is my favorite. 50 cents per enchilada.

September 8Sep 8 Yep. The El Charrito ones weren't bad either. I'd get the enchilada dinner. Mash up the enchiladas to make sort of a queso dip, eat them scooped up with tortilla chips. Then, do the same with the beans and rice, mixed together. L-I-V-I-N.
September 13Sep 13 What’s the spot in Wichita Falls with good enchiladas? Have a meeting there Monday night and want a decent spot to eat. Thanks in advance.
September 30Sep 30 My bride whipped up these awesome chicken enchiladas tonight. Here’s link to recipe: https://www.thecountrycook.net/chicken-enchiladas-red-enchilada-sauce/#recipe ‘The ‘red sauce’ is simply chili gravy. With that said, this recipe may unseat my stand-by Robb Walsh chili gravy. It uses 3 Tbs of butter in lieu of oil and a small amount of tomato sauce and some sugar, otherwise, it is very close to Rob Walsh recipe. Unbelievable good.
September 30Sep 30 Edit to the above - we used corn tortillas, not flour called out in recipe. Just saw that and was like WTF? Flour? That’s damn burritos. Sauce recipe is top drawer.

Can confirm regarding Juarez. Went for the first time last weekend. Good margs, FAST service and above average enchiladas. I'll go back. Just watch out you dont drive your truck into the retention whatever in their parking lot. I'm sure some marg'd up mom has done that more than once. Edited September 30Sep 30 by huge

They didn’t have the salsa bowl in the middle until latter days just before the shift to plastic. the big difference to later versions: that aluminum tray. Microwave ovens didn’t exist. Eating a TV dinner required planning: a hour in the oven. But the result was far better: the beans had that crust you get from a salamander, the rice fluffy not gloopy, the gravy rich with little pools of grease.
