my second time making the NEISD recipe. used american and cheddar for filling instead of Velveeta. onions are under the chili layer, crisped up during baking. 

i think i said this the first time but i forgot... the recipe has a touch too much salt. i made note on my recipe card this time lol. 

anyways...these are sooo good and are the flavor we've been craving out here! 🤘

Oh yeah - I mean, you're not entirely wrong, but those are marker onions to let me know which enchiladas have onions rolled in to them, which will be the ones that I smother with onions as soon as I take it out of the oven and will be the ones that I then scoop on to my plate.

I had a quarter sheet pan delivered via Amazon today, because enchiladas.

Celery, did you grease that sheet pan before loading the enchiladas?  Con carne on sauce?  No issues with sheet pan not being deep enough?

I didn't grease the pan, but the tortillas went from greasy plate to hot greasy comal to the pan where i rolled them. No con carne on the sauce -these were green enchiladas. Probably it would have been good to have some warm sauce to spoon over the enchiladas on the plate, and I might go 5 per row rather than 6 per row next time - I had to spill a bit of sauce in order to properly cover the enchiladas on either end. Admittedly not the most awesome looking enchiladas or picture - this was a "quick" weeknight meal while I was rocking a baby with my foot and the enchiladas sat there for a bit before i snagged a pic

also, wegmans only had a few tomatillos and I didn't have time to go to Wal Mart (which is has the most hispanic shoppers and is typically the best place for many ingredients without driving in to the Mexican grocery in Raleigh) so I used canned tomatillos. I rinsed the shit out of them, didn't cook them (since they are already cooked and would have come apart i think) and went light on the salt. I don't have a reference with fresh but the sauce was tasty and I need to try making ninfa's green sauce with canned tomatillos, could revolutionize my whole life.

Amazon has a quarter sheet pan and a quarter sheet sized cake pan by Nordic Ware paired.  Cake pan has higher sides and would appear to work well if using a red con carne gravy over the enchiladas.  Just ordered.

1/4 sheet cake pan worked well.  Much better than the glass casserole dish I used to use.

Oh man I need more details. My mouth watered and my butthole clenched looking at this picture.

Fast and easy.  Pound of hamburger browned and drained, added most of the big can (19 oz.) of Hatch brand medium red enchilada sauce (keep enough to cover bottom of pan).  About 4 ounces of hot home-roasted Hatch chiles from last season into the gravy, let it simmer.  Sprayed 12 tortillas lightly with Canola oil and browned on piping hot Blackstone griddle.  Grated 1 lb. of sharp cheddar, rolled the enchiladas, and put in pan after dumping remnants of enchilada sauce to cover the bottom.  Top with the enchilada gravy and any leftover grated cheese.  350 degree oven for 25-30 minutes, and you're good to go.

Just grabbed a cheese enchilada from Texas Chili Parlor. Plus a side of the XXX chili. We were sitting next to the window and I guess a cloud caused the lighting to dim. Though for a couple of seconds that my body was shutting down for good: this is the big one Elizabeth! 

My god that was spicy.

The plate at Triple C Steakhouse in Devine was better than anticipated.   
 

Salsa game was weak, pico de gallo  non-existent and I forgot to ask for chopped onions on top.

Goddamn....I must have eaten eleven billion meals at the Triple C over the years.  My grandparents are buried in the Bigfoot Cemetery down the road.  Love the Triple C.  It's a good S. Texas joint.  IIRC, good tex mex, cfs, cheap steaks, good burger.

My usual Devine Mex spot, La Hacienda Tapatio Fonda Ranchito Guadalajara de Lopes de Santa Ana #2, on the east side of I-35 apparently left the beans on too long and burned down the joint.  
 

Been a while since I’ve darkened the door of Triple C.   The steaks coming out of the kitchen looked good.

Damn those look fantastic. While you’re missing onion, you have to rate the plate first on the foundation. In all the years since lived away from Texas that was what I dreamed about.

We went there at least once a week growing up in Fort Bend Co.  That greasy cheese was unique.  Similar to the old Felix queso.

That's their failure, not yours.  You shouldn't have to ask, they should be asking you.

Otherwise, looks great. 

They should have been alerted to their mistake, and the manager comped the meal and provided some free peppermint ice cream. Right is right.

Yeah, this ain't Nam, there are rules.  Fresh chopped onions are standard, you gotta ask to have them left off (and much like a hamburger at G&M, it should cost more if you do).

Had to go to S. Texas last week.  Landed just before lunch time at HRL.  So, obviously, took the wife to Las Vegas Cafe for lunch.  Combo plate with enchiladas and carne guisada, real-deal flour tortillas in foil in the middle.  This is the way.
