Thanksgiving Day Menu Thread of COVID-19 Total Domination with Food Prons

Featured Replies

Good discussions going on throughout the board. We are doing a traditional menu + prime rib. Gonna be low key with just the wife and kids this year.

Cocktail Hour:

Cranberry-Range Spritz

Cider Whiskey Sour

Dinner:

Buttermilk brined turkey

Brioche stuffing with chestnuts and figs

Fiery sweet potatoes (basically mashed sweet potatoes made with red curry and coconut milk)

Cider-glazed brussels

Cranberry-orange jelly (Port, Grand Marnier, and fresh cranberries molded into Darth Vader (fingers crossed it comes out))

Parker House rolls (scratch)

Galatoire's sweet potato cheesecake

Wine (Not sure which ones yet)

I might be by myself with the dogs (might have a neighbor or two pop over), but I will eat well.  Fuck COVID.

I'm pretty excited. Allow me to get sentimental. I live within about a half hour of my parents and 15 minutes from my in laws. We have kids of course - 8 and 11. I'm like most guys I know in my demographic - can only stand so much family fun. I enjoy Thanksgiving and Christmas but come about 5 pm I'm ready to go home, take a nap, drink and watch football. This year I'm not taking any of that time for granted. We have not seen my parents since June. They are being ultra ULTRA cautious as my mom has COPD. I'm talking that they see no one other than my sister, who also sees no one. I don't even think they've been in a store since March. Once my in laws returned from wintering in Arizona, and we decided on a small circle for our kids to play with, my parents were not open to that level of risk. We agreed to have all parties self quarantine for 14 days so that we can get together. My parents are giddy as are the kids. We probably won't be able to see them again until the Spring or when this crap is finally over.

I will be smoking the bird in the driveway as per usual. Also some homemade hot link.

Mom is doing the rest - sausage stuffing, rice with lamb, fresh rolls, pasta, salad and apple pie.

Happy Thanksgiving everyone.

Chicken tomatillo tamales

Refried black beans

Lime cilantro rice

Grilled corn

Guac with chips

Key lime pie

Turkey

Ham

Chicken Tamales

Pozole Verde

sides and shit

Had a mini Thanksgiving with my kids last night before they go back to their Mom's today. Since they already had 1 traditional meal with their grandparents, we went slightly off course with:

Ham

Roasted Potatoes

Asparagus

rolls

Cheesecake

Having a more traditional meal tomorrow with the GF(no pics) and a few friends

I'm smoking a turkey on the WSM

Dressing (using my late Grandmother & Mom's recipe similar to NMAS' recipe in the dressing thread)

Mashed Potatoes

Green Bean Casserole

Sweet Potatoes

Chess Cake (also my grand mother's recipe)

Pumpkin Pie

My aunt has a solid recipe, but we won't be getting together with that side of the family throughout the holidays (COVID).

jealous...what kind of fish?

We have a mix of shit that's been caught by the participants (blue gill, crappie, northern pike) and some cod/whitefish that was bought at the grocery store.

The bluegills especially are delicious, but it's a lot of god damn work to get the meat off those little bastards.  Thankfully I don't have to prepare it, I just have to bring beer.

I should mention that these fish were all caught and cleaned this summer and have been in the freezer since August at the earliest.

Ha...I've never had one I really liked a lot that wasn't made by my grandma or mom.  Everything else we eat is traditional as hell so I figured it was a TDay staple for everyone.

I think of it as a "family gathering" thing, but not specific to Thanksgiving.

That sounds great.

Standard stuff (smoked turkey breast, smoked ham, dressing, gb casserole, m&cheese, asparagus, rolls, deviled eggs, cherry & pecan pie. Plus a couple other sides from the DIL. The smaller pecan pie is for a neighbor.

Deviled eggs get topped with the paprika tomorrow.

Thanks for bringing the prons armybrat.

First pie in the oven right now, and I am getting pretty buzzed on ranch water atm.

Might add some deviled eggs to the menu if we have enough left after the baking.

Went to the HEB today with absolutely no plan, just looking at what was around that looked good.  But I'm definitely out on turkey, because turkey sucks.

I found a 3-lb cowboy ribeye.  That'll do.

And then there were jambalaya-stuffed chickens.  That'll cover the poultry needs of anyone in the family who favors bird.

Aside from that, we'll have bacon & balsamic brussels sprouts, mashed potatoes, mashed sweet potatoes, rosemary sausage dressing, and some apple pie for dessert.

Wine is a 2007 Michel-Schlumberger Merlot and a 2012 Stag's Leap Cabernet.  Dessert wine is a port that I still need to pick up at the liquor store.

TTday meal from Eatzi’s in Dallas:

turkey breast

We had breakfast from there this morning, very cool place.

Yeah, I’m working on a nice buzz myself.

Just the two of us, but fuck it we are going all out. And eating leftovers for days and days.

Specialty cocktail:
Smoked rosemary Negroni

Menu:
- Oven-roasted turkey, using Alton Brown's wet brine preparation
- Savory Sweet Potato Casserole (think browned butter and sage flavor profile)
- BLT oyster stuffing
- Green beans, with a shallot/butter/white wine sauce
- Mac n cheese, mimicking the Luby’s recipe
- Roasted Brussels sprouts (nothing fancy - just olive oil, salt, pepper)

Dessert:
- pumpkin pie ice cream pie (made yesterday, pictured below)
- cranberry-pomegranate mousse pie

Here is the ice cream pie

Where’s my invite? Would love some tamales.

Smoked brisket

green bean casserole

deviled eggs

Garlic mashed potatoes

Fruit salad (bananas, strawberries, grapes in vanilla yogurt)

Pecan pie

lemon meringue Pie

BIL is making some kind of creole Cajun dish as well.

My folks were going to bring a turkey and dressing, broccoli cheese rice and something else but they bailed due to rona.

Normally we have a full house and host international students and single folks and serve a traditional meal with turkey and a lot of the dishes prepared above. Due to the plague happening, we are down to immediate family and reduced further as our Cali girl is going to stay put due to concerns about travel.

So, I asked the remaining family what they'd like and they came up with this plan:

Drinks are going to be varied but we have a full pantry so that may be determined later.

Duckling

Mashed potatoes

Dressing

Green beans, not the casserole--they hate that

Cranberries

Homemade rolls

Pumpkin pie

Day two will have the leftovers plus I will be adding sweet potatoes as the 'new dish' and probably another cream pie or lemon pie. If I have sweet potatoes left over then they will go in a pie, too. If the duck is consumed completely on day one, then we have a beef rib roast that will augment the sides.

Yeah, I’m working on a nice buzz myself.
I got shithammered last night at dinner.

But good news, the cranberry sauce came put of its mold this AM and turkey is in the oven.

Sister is doing the Turkey. I did the double-smoked ham on the BGE. Injected with maple syrup for 24 hours in fridge. Smoked for five hours at 250. Brown sugar and honey glazed for the last hour of the smoke.

Mrs. Tailgate is doing the classic green bean casserole.

Happy Turkey (and ham) day you crazy mofos.
