Is there a surly consensus?

 

I’m replacing a kitchen aid set and thinking wusthof classic ikon or zwilling henkels pro. Maybe Victorinox Swiss Army Cutlery Rosewood Straight Steak

 

Or is this a Shun only crowd?

I did some research and ended up on the messermeister four piece set. They’ve been sitting in my Amazon cart ever since so I can’t offer you any kind of outcome. I’m currently overseas for work. Give me a month and I’ll let you know.

Can’t go wrong with Victorinox. It’s the best bang for the buck when it comes to kitchen knives.

First you need to decide if you want smooth or serrated blade. Smooth is a cleaner cut, doesn't tear the steak fiber, but requires regular sharpening maintenance. Serrated is opposite, basically zero maintenance but it tears the meat and you won't really sharpen it.

 

The "classic" steak knife is Laguiole. That said, I've used them in a number of steakhouses and they really don't add anything to my enjoyment of the steak. There are many cheaper Laguiole styled knives as well. If you're a purist, a real Laguiole comes from Laguiole.

Absolutely nobody will be impressed by a steak knife.

Logically, this is completely dependent on who you have over for dinner

I inherited this set of 1950s Cutco knives from my parents, who rarely ever used them.  So I use them.  I wouldn't recommend buying them though if you're actually buying steak knives, since they go for between $200 and $350 and well, they're Cutco.

Equating finely made tools to big hats and tea pinkies isn’t utilitarianism

they're ugly and expensive, but cutco.  i'm a bit of a knife enthusiast and have sold almost all my other steak knives.  we only use our cutcos at the table now.

As mentioned, there's a lot brand confusion surrounding Laguiole knives, legitimacy, rights to the not-really-trademarked name, but we have a nice set from this outfit. They have a very satisfying heft, and I wholeheartedly disagree about how it's impossible to have impressive steak knives. 

They make good wedding gifts, too.

I got a little too drunk at Austin Land & Cattle many years ago and woke up the next morning with new steak knives sitting on the kitchen table.  They are perfectly acceptable knives, and I really don’t remember what I paid for them.

Team fancy kitchen knives. Buy once, cry once. Not much out there better than a great knife. 

My dad had some Cutco knives and I wasn’t particularly impressed by the big ones. The steak knives were pretty nice, though. I was initially turned off by the rounded tip but that was never a factor in their use. They’re sharp and they cut cleanly.

But there’s an added feature. Notice how they’re wider in the middle with a little groove at the front and back of the handle. That’s a brilliant design concept that lets you securely rest your knife on the edge of your plate while you’re not using it. It’s a snug fit. I never would’ve thought that was something I’d care about but it’s really convenient. Form follows function and these function great.

Right?  I saw the thread last night and figured that would have been the second reply.

I have a few high end chef's knives but to be completely honest for the majority of kitchen cutting I repeatedly just grab a dirt cheap Miracle Blade steak knife. they work better than any of the cheap knives I've tried for daily use. But if you're looking for nice knives for company then any Wusthof, Shun, or the like would work

Good feedback. Time to go grab a few and see how they feel.

We get a set of Chicago Cutlery steak knives every Christmas from a beef packer.  They are great quality and hold a good edge.  Some are over 10 years old and have been heavily used.  We also have a set of rosewood handle Laguiole steak knives that are our fancy knives.  Got them as a wedding present and they are beautiful and work great.  If Thurston and Lovey ever came for dinner, I would pull out the Laguiole but would also have no shame in using the Chicago Cutlery.

Weige knives. Custom made in Austin (really Belton). Not cheap but will change the mind of anyone saying they can’t be impressed by a steak knife. I just got a chef knife from him and it’s beautiful. 

Wüsthof.

Get a block. Either the Ikon 12, Classic 18, Gourmet 23. 
While you’re at it, get it monogrammed or your family name on it.

Motherfucking LOL.  I tried night and day to burn off points from the Accor hotel brand -- by the way, fuck every single fucking thing about them.  amazing theres a group worse than ramada/wyndham.  Found some Languiole set that seem to be underpriced, as if they had an oversupply of stuff to get rid of.

Turns out its actually "Lou Languiole" by "Amefa" which is some stamped shit steel where the bee looks like it was chiseled by a toddler.

I'm a cheap steak knife buyer, it doesn't take a great knife for a perfectly cooked, medium-rare steak.  That said, spend the money on a good chef's knife, paring knife, boning knife and Santoku.  I have a mix of Wusthof and Heinkel, and some generic steak knives, probably from Target.

 

Can’t go wrong with Victorinox. It’s the best bang for the buck when it comes to kitchen knives.

My favorite two knives are victorinox. Crazy sharp and cheap.
