Mrs. Brat is making a batch of cream cheese dip from my mother’s 60 year old recipe. This very rich & dense dip is a huge family favorite, and two sons have requested some of it for the weekend (it is better after mellowing in the fridge for a couple of days).
The chive cream cheese and roka cheese in jars are no longer made, so she has substituted some ingredients.

She will also make the bacon wrapped Lil’ Smokies baked with brown sugar. Then a customized pork & beans side.

I’ll be grilling burgers & slovacek sausage.

I'll be making a new powder room during the Superbowl more than likely...  Forgot it was this weekend.

Well, after eating all that on our menu, I’ll be using ours for a couple of days afterwards.

I'm having artist's block, so I'll probably just get a variety of chicken wings from Central Market.

Smoking some ribs and grilling some corn. Probably some sausage for appetizers.

My wife is having minor surgery Monday morning. We have to be there at 5:30AM. So this will be the first time I haven't done anything for the SB. But tonight we are making a bunch of fajitas  and drinking beer since I can't on Sunday

Smoking some wings and doing bacon wrapped japs. It may just be me and the wife and maybe a couple friends, but I don’t feel the need to go crazy this year. I am going to try to do a recreation of plucker’s bakers gold though so that should hopefully be better than just regular smoked wings. 

Doing wings and queso dip. Is there a oven baked wings recipe anywhere on Surly, or one that's a favorite? I don't have a smoker, and don't want to deep fry them. I've got one I use, but would be like to try something new.

Air fryer is easily the best option, even with a traditional oil fryer or smoker.  Stupid easy and they come out fantastic.

I don't have one of those either. I've thought about getting one, but don't "fry" enough things to justify buying one.

They are great for everything.  Protein options are obvious, but veggies in them are really good and cook fast.

I do Keto 99% of the time, so might need to reconsider.

As do I (or some derivative of it) the vast majority of the time.  Mainly protein and veggies - for which the air fryer is amazing at and cooks fast.  

I don't want to derail this thread, but are the combo of air fryer and instapots good, or better to just get a stand alone fryer? 

Search the internet for Alton Brown’s wing recipe. They are steamed, refrigerated and then baked. They are very good.

I use the Bobby Deen method for over baked wings, season to taste(salt, pepper, garlic salt) bake @450 for 15 minutes, flip over and cook another 15 minutes(ovens vary so keep an eye on wings).  I like my wings crispy and naked, like my womens. 

Baby backs. 
Smoked chuck roast that gets braised in beef broth, and onions and assorted stuff. 
Pulled beef on Telera rolls with au jus. 

I just picked up a couple of axis doe from the processor. My daughter and I will be eating flame kissed backstrap with appropriate salsa and corn tortillas, axis ground noach, and whatever my wife eats.

BBQ (ribs and burnt ends + baked mac and cheese) vs Florida beers (all Cigar City Brewing beers) since it’s the Chiefs vs Bucs

Got a new TV this week, so that's pretty cool. The one family we hang out with during quarantine is coming over. They're bringing a buffalo dip and pigs in a blanket. I'm smoking a pork shoulder for sammies. I'll reserve a pound of the meat and also make pulled pork nachos. 

I'm going to rail a bunch of lines then sing Can't Feel My Face loudly at halftime

Couldn’t find any uncooked wings this morning so I got jalapeño poppers to go with ribs.

I'm doing sammiches . . . Reubens and cheesesteaks (shaved ribeye I did in my food processor).  Old school.

Regarding wings, I saw a technique shootout somewhere on the interwebs yesterday, and the 2nd highest rated technique was:

 

-- preheat oven to 400 F

-- dry wings with paper towels

-- season with kosher salt

-- place baking rack in sheet pan

-- put wings skin side up on rack, cook for 1 hour, no turning, no touching

 

That's it.  I tried it yesterday -- very legit.  Not as good as fried, but about as good as I can imagine for baked.

 

 

The secret to oven baked wings is baking powder.

If you can dry brine overnight that's best to really get the crispy flaky skin, but if you are doing this day of it's still worth adding.

Rice flour works well too. That’s what the Korean fried chicken places generally use.

Keto here as well, the Air fryer is amazing for that diet. Wife "breads" chicken tenderloins in crushed up pork rinds and parmasan cheese, then air frys it.  Best chicken nuggets in the entire world, crispy and juicy.  She's working on perfecting her keto chicken fried steak too.

Anyway, a brisket and 3 racks of baby backs here, apparently I was nominated to feed a couple of couples.

Nothing too special. I did get some HEB queso to have on Sunday. It was open.

Spicy refried beans, beef, chorizo, Frank's Red Hot, green chiles, jalapeños, cheese, red and green enchilada sauce. Prepped it yesterday, then put it in the fridge until game time to be cooked.

We skipped a party invite (too many people) and are hanging at home.  Went to Dai Due and picked up some dry-aged wagyu patties and brioche buns, and some brined chicken wings (which are on the smoker now).  Also making some homemade queso.

This right here. That is what I always do and everybody loves them.

If I have a super power it is getting food done just as halftime starts.

Hot chicken w/ homemade fries, homemade slaw, homemade pickles, and homemade blue cheese dressing.  everything but the bread.

Made wings in the air fryer for the first time.  Actually turned out pretty damned good -- crispy, held up to the sauce well.

Made the HEB pre-packaged brisket queso (saw it, thought I oughta try it).  Meh.  It was okay, but just had too much going on there.  I prefer my queso to be a bit thinner and simpler (maybe toss some chorizo in, and/or a scoop of quac to dress it up).

And....it was 2-1 cheesesteak at Delaware on Sundays, so the boy and I got those as well.  Ate half during the game, the other half is lunch today.
