December 26, 2024Dec 26 These are hallaca (pronounced ah-yawk-uh) -- a traditional Venezuelan Christmas dish. They are made in a similar fashion to tamales, but don't taste anything like them. They are made by stuffing arena de pan spread on plaintain leaves with a mix of beef, pork, potatoes, carrots, green and red peppers, sweet peppers, onions, garlic, leeks, green onions, raisins, capers, green olives, aceite de achiote, and spices. The stuffing is cooked separately, then allowed to cool before putting it on the arena de pan which has been spread on the plaintain leaves, all of which is then wrapped and tied off to be boiled.
