Spent some time at the beach with our long time port-o- geezie speaking buds for a day or so last week. That's a 32" dia. paella pan. They had to make sure it'd fit in the front door after cooking.  Start with chicken, sausage, peppers, spices, etc, more cooking.

Then it's the rice, and broth.

Shrimp, and mussels next.

Then it becomes an industrial sized Jiffy Pop popcorn maker for 45 minutes.

Feeds about 35 easily.   These people know from Paella !!!!

Onboard---where do you live the rest of the year?  Austin? You've inspired me to get back to my paella cooking and I wanna invite you to our cookoff.  

Feeds 35?  Closer to 15 in my experience...  :) My 24 incher feeds 8-10...

There were 22 adults, and college ager kids. We all ate, and there were leftovers for most everybody.  Maybe it was a loaves, and fishes thing, but it delivered.

East Coast....  I was just assisting with the cooking... and eating.  It was so cool watching it all come together, it's such a pretty dish.

what spices did they use?

Very close, Raybans... check, but I was in a pair of Birdwells...

I have that same pan and make paella a couple of times a year. Order in lots of bomba rice. The hardest part is developing a socarrat without burning it. All paella is good. Paella with an excellent socarrat is food of the Gods.
