Headed out for a fishing trip and decided to stop for lunch at Eaker Barbecue in Fredericksburg.

I plan to sustain myself with barbecue through the weekend, so I got a some brisket and Hatch chile queso sausage to go. 

Eaker has two types of pork ribs - traditional dry-rubbed and Korean style Gochujang Pork Ribs.  I opted for the latter, a slice of moist brisket, and a side of kimchi.

The waygu brisket was a little dry and under seasoned.  The kimchi was kimchi.  The ribs were delicious.  The flavor was amazing and the cook was perfect with a good bite.

Not sure if I'm be back - mainly due to avoiding Fredericksburg at all costs.  Although the brisket was merely welming, I'm glad I tried the Korean ribs.

its a super unique spot in the Texas BBQ world. Lance and Boo are incredible folks. 

We drove 290 thru F-Burg etc. on Saturday headed back to Austin.  Holy shit, that area has exploded with breweries, wineries, and distilleries.  The town itself was a total clusterfuck (although to be fair it was Oktoberfest).

Yeah these days you gotta try to go around maintown Fredericksburg on a weekend.  

But I do love the town and the area.  My BIL bought property out there a few years back and they now have a super tricked out barndominium on it, and they've started building a house.  They also have a couple of pads with RV hookups and so we go and stay with them a week or two each year.  

The property next to theirs is about to go up for sale and I'm seriously considering buying.

Joe pulls up into the parking lot at kroger with a giant pit dolling out brisket and beans. I could smell the post oak and mesquite a mile away.

Fished the Nueces River out of Camp Wood this weekend.  The group ordered barbecue from Canyon BBQ and Grill yesterday evening after a full day float.  I didn't expect much coming from a town of just over 500 - I checked it out online before heading down and the barbecue pictures don't look very good.  I was quite pleasantly surprised.  Brisket looked beautiful, was seasoned well, and cooked perfectly.   A little more trimming on the fat cap would have made it even better.  Smoked turkey was moist and tender.  Smoked boudin was a surprise offering and was nice.

Huh.  I've hit it multiple times as a "we just want some barbecue where we don't have to wait in line, but still want better than Rudy's," and I truly haven't had a "miss."  Is it the BEST EVER?  No.  But has it been consistently good?  Yep.  In fact, so much so that I tell out-of-towners who don't have time to wait in line somewhere that's a decent place to go to get a sampling of legit Texas BBQ.

The Fritos weren’t too stale, but everything else was a miss. I’m a snob, but I’d rather have Rudy’s if you’re going for that tier.

On a similar note, the line at Terry Black’s was a complete shitshow today, so I popped into Green Mesquite after reading upthread that things had improved.

Based on what was consumed today I can firmly say that is NOT the case.

Ribs - B (tender but overcooked)
Sausage - B (tasty and good snap, but overcooked)
Wings - C (what I’d expect from Domino’s)
Brisket - D (for dogshit… I’ve had better at truck stops NOT named Buccee’s)

That's what they gave us with the 3-meat plate instead of white bread. I approve. I wound up putting a little brisket and sausage on one of the buns with some red onions and pickles. Not too shabby!

Yes. Not sure all the bbq land drama behind this one, but I think the owners split ways and one of took on the castroville location with the other 2m. But that maybe totally made up.

Well duh, I could see that. I meant where in DFW is it located? I looked it up. It's somewhere named Fate, which appears to be a little further out 30 from Rockwall. It's a bit of a hike for me but looks really good.
