Maybe they've improved?  I gave them a couple of shots within a few months of their opening, since I'm at Hopfields quite a bit anyway, and it was pretty much  Bill Miller quality.  At the time they were bringing everything in from Lockhart, commissary style, and it tasted like cafeteria BBQ.

If they've improved since then, good for them. 

Yeah I mean that’s possible - Gave up after my last visit maybe 6 months ago.

$35/lb for chopped beef is beyond the pale.

I’m pretty sure that was the unanimous consensus when brisket first crossed $20/lb.

$35/lb for chopped beef is beyond the pale. 

It blows my mind how expensive brisket is yet we haven't seen much consolidation in Texas BBQ. The industry has never been in a better position than it is now, seriously you can throw a rock in any direction and find a BBQ joint putting out stuff that would have made the Top 50 list 10 years ago. I'm at the point now where enough is enough. Will buying the $155 trough at Pecan Lodge cause me to miss my next mortgage payment? No. But I just can't justify paying $4 for a cookie, $8 for 4oz of pudding, and $40/lb for brisket.

Railhead in FW sells a pound of brisket for $20.  Though not recognized as "Craft" bbq, it doesn't carry the craft tariff either and has been my go to for sometime. While I have eaten at most of the DFW Texas Monthly top 50 'cue joints, Charlie Geren's joint consistently does it for moi.

Hit up Churchrow on Anderson at lunch today. It’s in the old Black Gold location and is basically a new version of Valentina’s with Miguel manning the pits but not the money. Got there at 12:30. It was packed but I was second in line. You order 2 feet inside the door so there’s no room inside for a line so it’ll always look packed from the street. always wanted to try the La Reina smoked pork neck sandwich so I order it and a side of beans. 45 minutes later, I got my beans and free fajita taco as an apology for the wait. 1 minute later the La Reina came out but instead of a sandwich it was a taco. Maybe there’s a version of both on the menu and I didn’t specify which. Regardless, it and the fajita taco were both fucking stellar. The meat was perfect and the tortillas are the best in town. Hopefully, they figure out how to speed up the kitchen. That was the only stumbling block.

I lost my shit.  My wife side eyes me with a "Ok, yeah, you can tell this fucker off."  In a low volume told him no fucking way and that there were a half dozen places minimum in Houston alone that were far superior to anything he could get up there.   That within 2 hours of us, there were another 10-12 places that would shame Chicago and the entire Midwest with the exception of maybe some places in Kansas/Missouri.  If we expanded that out to the Austin/San Antonio and DFW areas, we could add on another 10-12 or more.   Never mind the number of backyard warriors who do amazing BBQ in their own right.  

Since then, he's stopped being such an insufferable "Chicago" prick.   But that night really pissed me off.

It was a pretty full restaurant and everyone just silently stared at him till he lost steam and left. Probably the weirdest lunch I've ever had.

In 2026 you are going to see a LOT more of a focus on chicken quarters, pork steak and smoked hamburgers.

I say that... but every place I know of whose on the ball has already made that change.

Sadly in 2026 I think we are gonna see a ton of really good places close.

I spent a couple of years in Chicago, on and off.  I don't think I ever had BBQ.  I honestly don't think the idea ever came up.

Barbs is now open every Friday. Got there at 10:30 and the line was just forming for the 11am open.

Everything was excellent. The lamb chops sell out fast. Top left is some tasty pork stew. One jalapeno and cheddar link and a forget what the other link is.
The green spaghetti is even better as leftovers.

Man, for my money there isn’t a better sausage than Lockhart Smokehouse. Get it by the ring, both the OG and Jap and Cheese; Perfect. Perfect snap, perfect blend, greasy but also a nice dryness to it that lets your enjoy the taste and the linger. Just a personal favorite.

My parents asked me for a recommendation for a BBQ place in Luling…. I told them to try here even though I haven’t been yet. They walked in, saw the menu, then left. Fools.

What was it about the menu that turned them off?  Price?  Barb's is crazy expensive, but damn good.

They said it looked like it had more of a diner feel and not bbq and they said it was small. Like I said, I have yet to go but once I told him that was the girl Who cooked briskets at goldees he felt like a dipshit.

Definitely doesn't have a barbecue joint feel to it. 

I checked their prices and they are inline with Austin places like Franklin, Interstellar, and Terry Black's.  Terry Black's in Lockhart is cheaper as is LA BBQ.  I just remember when they opened the prices seemed ridiculous.

Looks, price, hell even restrooms are things I dont judge bbq joints by.

 

In fact the only 3 things that usually matter are the meat, how fast the line moves, and, maybe, hours?

I’m with you.  I loved railhead from its opening and ate lunch there about once a week when I worked in downtown Ft worth.  It’s very satisfying brisket and that smoked salami is tits; the fries and jalapeños are perfection and the beer is cold and in a frosted mug.  I eat most often at David’s in Pantego, which is of sonny Bryan’s. As it’s 2 minutes from the house.

Been a while, but back in 2003 there was a place called Corky's in Odessa that served mesquite smoked burgers which wasn't common. The ground beef was thoroughly smoked. They also had an excellent peach cobbler with ice cream. I believe they closed some years later but a current search shows a Corky's Bar & Grill with neither item on their posted menu.

Not sure if they still do it but when they opened they sourced all their sausages from Kreuz, quick google seems to insinuate they still do.

stopped at truth in brenham last week. all of the meats were excellent. my only complaint with them is always the accoutrements...pickles not good, prefer raw onions to pickled, give me thin white bread. meat is fantastic though.

Mum's ribs are incredibly well done.  They are a little too sweet for my tastes, but I really appreciate the bark and being cooked perfectly.

I always stay off Michigan and eat ribs at Carson’s.  They own the ribs.com url.  It’s evolved from an old timey Greek steakhouse, so my boss and I sit at the bar, eat shrimp de jonghe, and a rack of baby backs.  They are heavily smoked, proclaim them “never boiled” which is an issue with yankee ribs, and douse them in a very good bbq sauce into a glaze.  It’s not a Texas rib or a Memphis rib but still enjoyable eating.
