When John was fired from the South 1st operation, it was quite bloody & of course not having even a scant of information, the hate for LA was off the charts.Move forward a few years to the "Official Meat Purveyor" @ 6th & Pedernales & after the investors found out the truth (i.e. a pit was repo'd, bridges got burned), very few stepped up to admit they were wrong about how all of that went down for the schism between John & LeAnn.With what little resources available to me, I did my best to help John with the South 1st shop. It's like "Breaking Bad" where one small (bad) decision leads to another fork in the road & that leads to another bad one, etc. Nobody can read the tea leaves & of course hindsight 20/20, etc. to know what was coming for the next ~10 years of his life.Wherever he is, whatever he might be doing, hopefully John has found some respite & is enjoying peace (whatever that is for him).

February 1, 20223 yr MIA looks vastly more rugged than I imagined. I also have the sudden desire to avoid a kickboxing match with him at all costs. Seriously, condolences to those of you who knew and loved the man. Left Austin before his various enterprises took hold there, so all I "knew" of him stemmed from the bits of gossip that popped up on threads here, ToS, and HF. It is comforting to see that there are many more layers to a man--even a troubled and tortured one--to those with the patience and empathy to observe them. RIP, Dark Prince.

He could set up shop in central Austin and do well despite the competition, but he is a unicorn in Charleston when it comes to brisket. There’s probably nothing in a 500 mile radius that comes close to what he is putting out. This pleases me greatly as Charleston will be my new home this summer. I have a feeling I will get to know John pretty well.

I had the one from Buck's before it went under, which apparently was made from the recipe (with credit given). Mine tastes close enough to what I remember. I just found a recipe on the internet and adapted it based on memory and this picture. Chop up 4 yellow squash and one onion. Fry it up in two tablespoons of butter. Salt and pepper to taste. When it's tender, put it in a colander and squeeze the moisture out of it. Transfer it to a bowl and mix with 1/2 cup of sour cream and 2 to 2.5 cups of shredded cheddar. More salt and pepper if needed. Transfer to baking dish and bake (uncovered) at 350F for 25 minutes. Edited June 17, 20232 yr by dcbc
