June 5, 20223 yr what’s going on here? it’s an induction stove on high and that pan is hotter than the sun. shortly after this video I actually poured some oil in there and it immediately turned black and burned. so how is this little ball of water not boiling? from what I remember in school for water to stay liquid over bp it needs to be under high pressure, no? June 5, 20223 yr You're observing the Leidenfrost effect! The water IS boiling, but only a thin layer immediately touching the pan that actually insulates the water drop from more heat.
