Nothing special, Makers I dug out from the FILs liquor cabinet.

And despite my protests, the wife would not package up some turkey for snack sandwiches at home before we left.  So was relegated to reheating some cheese enchiladas and venison chili when we got home.

plastic wrap was to keep my sister's cats out of the pies overnight

What is this thing? Never has a culinary item caused such a commotion!  Imagine taking a deboned turkey, duck & chicken and combining them to make one entrée! Only the wing bones on the turkey remain for aesthetic purposes. For a healthier product, we remove the fat and skin from the chicken & duck. These three meats are then separated by layers of homemade stuffing. This mouth-watering delight is seasoned with La Boucherie's special blend of seasonings.  Slice through it like a cake. So easy to bake and serve!

No mess, good wine and their Thanksgiving menu.

Pecan pies especially.  I broke a several year stretch of damn good pecan pies this year when this years pie decided to barf all the egg/sugar filling over the pie edges.  Thankfully I have learned to place a tinfoil drip catch on the lower rack.  The suger/smoke mess had I not would have been a gathering ruiner.

 

Made up for it with some collards that truly fucked.  Got my hands on two meaty smoked pork shanks and the greens/meat ratio was sublime.

Was just me, my wife, and my dad this year (the kids don’t come home from overseas for t-giving). None of us are huge turkey fans, so we ditched traditional Thanksgiving, and went to Eddie V’s, which 1) was PACKED, and 2) delivered, as always. Seriously, I e never had a miss there.

Started with oysters and Caesar salad, and then these:

Uhh no it’s not.  We have dressing and orange jalapeño cranberry sauce regardless of protein, whether it’s a ham or prime rib roast or a shrimp boil or venison backstraps.

2025 Stunt Turkey is on the books.  Dark meat vacuum sealed and frozen for gumbo.  White meat vac-sealed and frozen to give to a family we help out.  Bones and carcass are going into the stock I'll make tomorrow and freeze.  Drippings separated from the fat, poured over the roasted veg, and frozen to be used for the gravy.  The process has begun.

My DiL entered a charity raffle and won a quarter of a wagyu steer.  I’m expecting a fine ass Thanksgiving.  Hopefully the quarter is more than the head, legs, and tail.

It's a 10 lb turkey purchased to harvest bones for stock and and to collect drippings because I want to make things ahead of time with these ingredients.  Unfortunately, I don't keep a small roasting pan around.  So, yeah, it looks, how should I say, unimpressive in its girth.  But one of those drums had a nice crisp on one side, and the dogs and I suitably were impressed.

 

/TLDR.  Yes, it's a turkey for ants.

I was gifted a chunk of moose backstrap this year since I didn’t catch one this hunting season. 

Since it’s only Mrs. Moose and I, the plan is to make a batch of yeast rolls and have chicken fried backstrap sliders. Lettuce and tomato available if you want it “Dude Style,” or a bowl of cream gravy for dipping. 

Chocolate pecan pie for dessert. 

At today's prices I don't think $0.25 will buy enough for a Thanksgiving dinner

On this Veteran's Day, thanks to all of you who served our country honorably and selflessly.

 

I will attempt to honor you by making the most bangin' pre-Turkey-Day brown stock ever.  In addition to the carcass and bones of the turkey-for-ants above (a/k/a Stunt Turkey), which have taken a trip through the air fryer to roast up, I also roasted many reserved and frozen bones from pork shoulders, pork ribs, and two tomahawk ribeyes.  Roasting some garlic, onions, and carrots now (celery goes in raw) and will be spending my time off today simmering all of the goodness out of this barnyard, skeletal cornucopia, which ultimately will end up in dressing, gravy, and gumbo.  Pictures incoming.

I add 1/4 cup bourbon to the boiling sugar and syrup when I make my chocolate pecan pie.

How fast do you have to run to catch a moose?

At altitude, that is impressive.

After about eight hours, I had nearly 4 gallons of stock.  I think I'm good for a while.  My house will smell amazing for a week.
