I am looking for some good fresh sausage here in Austin...

Recently picked up some great sausage at Legacy Custom Meat Processing out by the looney car dealer on 71 near Ellinger... really good fresh sausage.  Anyway, stopped there last time I was passing by and they were out.

So, any suggestions on good local meat markets/butcher shops for fresh sausage that I can then grill up (rather than precooked)

^ Yep, Texas Sausage Company would be my first stop. 

I drive up the road to Zabcikville (east of Temple) for Green's Sausage House for fresh sausage.

I was initially reluctant to click on this thread, but was relieved to find out that it was about food.

Lavaca Street Bar game watch party, or a Surly tailgate.

My favorite is Southside Market in Elgin.

HEB sells it precooked and raw plus there is location in Hutto.

Their Louisiana Lightning hot link, in my humble opinion as a person who has spent 92% of my life in a geographic region that thinks sausage is bratwurst (and puts ketchup on it), is probably the best sausage I've ever had. That's what she said.

Any up to date recs for local market. Texas Sausage Company has unfortunately shut doors. In particular need a bulk order, 50# or so. Any other option beside Hudson and Stuffed local to Austin area?

Longhorn Meat Market in far South Austin.

Their website isn't kept up to date as far as what's in stock, but if you call they can tell you if they have something or when they'll have more.

They have lots of styles to choose from--beef, pork, "regular", flavored.  Beef and sage is my favorite around the holidays to have on hand.  Venison and wild boar jalapeno cheese might be my favorite overall.

Would love it if someone can verify that they are open at that location, though.

Smokey Denmark (based for several decades in east central Austin) has some quality sausage.  Their "hot links" are badass, exponentially so if you throw em on the smoker for a couple hours.

Green's Sausage House might be an option.   A little farther out of Austin, but they make great sausages.
