Also, guides are cheap in Europe.  Hire a private guide to go off-piste.

Have stayed here http://www.risaccia.it/ and here https://www.hotel-piccolo.com/en/ but I don't know if they do less than a week at a time.

In Selva there are a bunch of places in the green area...  Specifically Val Gardena Ortisei is the most expensive option.

Thanks texasdago!   I will not be skiing (nursing a bad knee) but just want to be in the mountains...

You could go to Bolzano, Bressanone or Vipiteno
