Anything really, although if you are domestic don’t use it to watch YouTube and Netflix as that is an unnecessary suck on the bandwidth. If you need it traveling abroad then it’s fine. But if we have a few hundred people trying to stream Netflix on it at the same time for 2 hours it’ll be hard to cover the network cost for so cheap. I have access to an unmetered 10gbps connection I’d put this on for fairly reasonable in a few US locations.

IMO, you're gonna run into lots of folks using it for region shifting their Internet traffic. Getting around regional locks and blocks, that sort of thing. If you offer it as a perk you're gonna want to put some quotas on it just to protect yourself from the bandwidth cost running out of control

I don’t think YouTube and Netflix are going to be the major streamers people access given a particular law in Texas.

We will keep absolutely no logs. Your VPN credentials will however be tied to your account because creating rotating credentials is way too fucking much work for the subscription fee.

same question here.  My ISP thinks I'm in Los Angeles, so Dodgers and Angels are blackouts for me.

I use Mullvad. I like that it's super easy and I can easily split tunnel to make plex easier.

I am technical enough to google command line stuff for linux, was using a rasp pi for a while, but I can't troubleshoot issues.

Would you suggest I stick with Mullvad or give this a shot?

Whatever that is should be your target. Use outside of that should be minimal.
