I really wonder how much this restaurant is charging for a dish that has close to zero nutrition. 

I know I’m going to restaurants based on nutrition. (That said this is beyond dumb)

that sounds like it would have a horrendous consistency.  plus, it's just sweet tofurkey, right?

that said, i saw a tim love deal on grilled watermelon and did it alongside some grilled chicken and sausage, and it was pretty damn good.  1.5-2" slices, cut into wedges, grilled a few minutes to get some char.  serve topped with chili powder, kosher salt, and some lemon juice.  was a nice change to the boilerplate summer grill dinner.  had that stuff with a nice, tart gose.

Yeah, by nutrition I just meant calories. Watermelon as it is has very few calories. Brining and smoking it wont change that. If you fried it in lard I might consider it.

GW Fins makes something damn close but they compress the watermelon to give it more of a firm bite and don't grill it.

yep. but grill haloumi instead of feta
