February 4Feb 4 We're going back to some basics this year. Have a prime brisket and a couple of pork butts to smoke. Friends are bringing Wing Stop wings, 190 Smoked Meats jap/cheese sausage and we're going to pick up a couple of sides from my buddy's BBQ place (Sammy's) -- the OG baked potato casserole, fried okra and maybe cole slaw or something. I'm sure somebody's making queso.

I never really cared for pimento cheese until my wife got me hooked on it a few years ago. Ina Garten has a spicy pimento cheese recipe that kicks ass, and I put that with bacon on sourdough bread for grilled pimento cheese sandwiches. That and maybe some sort of meatball action and a buffalo chicken dip.
February 6Feb 6 Probably some kale while watching To Kill A Mockingbird on TCM. I'm just kidding (about the kale part anyway), I'll probably grill something though I have grilled pollo rojo, pork chops, and NY strips this week for dinner with the weather being nice, so I'm not sure what we'll be in the mood for on Sunday. Growing up with there being 5 of us we laid out a buffet that felt like heaven for a 12 year old. A spread of bagel bites, chicken nuggets, pretzels, goldfish, wings, fruit, candy, etc... It was a white trash smorgasbord.

If you find yourself in Denver, the Denver Biscuit Company had a fried chicken sandwich with pimiento cheese that I found to be very good.

February 8Feb 8 We buy the HEB stuff and make our own too. I eat a lot of ‘minnow cheese” as my twins used to call it. It’s great with roasted pecan pieces mixed in.

February 8Feb 8 Here's one of my annual SB dishes: 1/2 lb. lean ground beef 1/2 lb. chorizo 1 large onion, finely chopped 1/2 teaspoon hot pepper sauce salt 2 cans (1 lb each) refried beans (one spicy one regular) 1 can (4 oz.) chopped green chiles 12-16 oz. shredded cheese 3/4 cup green sauce (taco or salsa) 3/4 cup red sauce (taco or salsa) 3/4 cup chopped black olives 1. In a large skillet cook the ground beef and chorizo until light brown. Add the onions and cook until softened. Drain and season with the hot pepper sauce. Set aside to cool. 2. In a deep 9x13 baking dish, spread the refried beans over the bottom. Spread the cooked meat evenly over the beans. Sprinkle the chopped chiles over the meat. 3. Spread the cheese on top and sprinkle the chopped olives on top. Drizzle the green and red sauce over the top of the cheese. At this point you can cover and keep refrigerated for 24 hours until ready to bake. Let it return to room temperature before baking. Preheat the oven to 350 degrees and bake for 20-30 minutes, or until hot and bubbly. Remove from oven and let stand 5 or so minutes before serving.

February 8Feb 8 I like doing food tied to the host city or one of the teams. well, we ain't doing shitty BBQ or cheesesteaks either. It'll be some Jambalaya and andouille sausage. Simple, yet good comfort food. No guests either. Looking forward to it!!!

February 9Feb 9 Starting out with a spicy grilled pimento cheese sandwich with bacon on sourdough to build a base. Followed by brisket and cream cheese stuffed japs wrapped with bacon, and a Bloody Mary.
