I do the boudin ones at home.  Take a sheet of crescent rolls and roll up half a link of boudin in it.  Bake like the package instructs.  Then slice.   I would guess you could use some cheese too, just not sure which would be best. 

You are right about the ones in the donut places usually being too much bread.

That's not a Czech bakery.  Notice the Central Market sign at the bottom. 

Also, they are shiny.  Pigs in a blanket should not have a shine to them.

When I roll through West I hit up the agggy place on the west side of 35.  Clean bathrooms and no traffic jam bullshit like the other place.

I drove downtown to the original place once (village?). That was a waste of time.

the label in the glass case has all the proper klobachniky type names but fuck that - “I want 3 jalapeño cheese kolaches - the big ones, muy pronto por favor.”

this is texas, we can call things whatever the hell we want to.   if the czechs wanted us to call it klobasniky they should have thought twice before bombing us at pearl harbor

Dos Gatos in San Marocs has some great Kolaches as well, both fruit and meat Kolaches ...I don't care what they are called because they are good.

When I stop in West I get 3 fruit (which fruit depends on my mood) and 3 breakfast sausage boxed up and one pepperoni to eat on the road.

Sounds like someone crapped in Joshua's salmon fajita kolaches this morning.

The Kolache Shoppe on Burnet used to make some thing that looked like a small cinnamon roll, but instead of cinnamon, they rolled up crumbled bacon into it. Genius.

This. Love the idea. But the execution is almost always just doughy.
The bakery in downtown LaGrange uses pan sausage and those fucking things are so addictive. 

Pan sausage filling is vastly superior to link sausage filling.

BUT...I’ve always loved the sausage Swiss and kraut one at the Czech Stop. Became a tradition for me when I’d go to OU games early on Saturday. Grab a couple and a cuppa coffee at 6:00 am, and I was good to go...till I got the fair and chased it with wax cup beer and a corn dog for second breakfast.

This thread has been very satisfying. Almost as satisfying as the kolaches from Green’s Sausage House.

My favorite is the Chilean sea bass fajita with chili bean kolache at Kolaches R Us.

 

This thread makes me hungry for pineapple kolaches. That's my favorite.

This thread hits close to home because I'll be stopping in West on my way to the TCU game.

I think I'll walk into Czech Stop and ask them very loudly which "danishes" they recommend.

Peach klobasniky is my favorite.

I like to dip my shrimp fajita kolaches in French dressing.

If nothing else, we are developing some interesting ideas for fusion cuisine on this thread...

To summarize:

Sausage + bread = klobasnek
Fruit + bread = kolache
Anything else + bread = fag food

I like the ones with ranchero eggs in them from kolache factory.
