October 31Oct 31 Also, in "that is one of the most Brisketexan things ever" news, there's this: Cleaning out my parents' house after my dad's death. They kept....EVERYTHING. Seriously, like stacks of those little notepads my dad would carry in his shirt pocket. We have a million of those. Last weekend, we were really tackling all the papers pretty hard. I'm going through those notepads, and I get one that's from what looks to be around 1978. My dad was clearly pondering some investment ideas/ways to make money. His current job had him traveling to Louisiana for probably two weeks a month; he knew S. Louisiana like the back of his hand. So, I get to the page where he listed what he thought were his best three options. I can't even remember what the other two were, but there in the #1 spot was "Popeye's franchise?" Imagine that. Familia Brisketexan coulda been the folks who brought Popeyes to Texas. What coulda been....

But now they're going to read it anyway.
October 31Oct 31 Needs “Dear Penthouse Forum” opening and writing in the first person. Dear Penthouse Forum, I never thought it would happen to me. As I entered the room I found Susanna and her moist bosom delicately glistening from sweat our eyes locked and she noticed the much more profuse trails of sweat on my forehead a result of rapid thrusting consumption of a 6 piece basket of spicy Popeyes chicken…. November 1Nov 1 At what point does supply and demand bring prices down? At these levels, beef consumption has to be down significantly.

I don't remember egg farmers bitching about that move. Why is it bad to do the same for beef prices? I'll hang up and listen.

Because this is the beef industry's first time to engage in price gouging since COVID? Egg industry makes up some bullshit excuse at least once a year. My favorite was "Well, we're in baking season." Like that was the first year everyone decided to bake a cake or something.

Just in time for bird flu Quote As birds fly south for the winter, they're carrying with them some unwelcome cargo: the H5N1 virus, or bird flu. In the past 30 days, the virus has struck 66 poultry flocks, leading to the deaths of more than 3.5 million turkeys, chickens and ducks, a steep increase compared to the summer months. The virus can spread easily when infected wild birds mix with commercial or backyard flocks. https://www.npr.org/sections/shots-health-news/2025/11/06/nx-s1-5600125/bird-flu-risk-outbreak-trump-administration

Few weeks ago I went to Costco to get steaks to grill while watching football on the patio. $18.99/lb. NOPE. Pork Shoulders on the WSM made some delicious PP sandwiches. Froze portions and have had Kimchi Rice bowls and Quesadillas subsequently.

Personally, we've moved on to top sirloin cooked rare. It's pretty underrated as long as you don't overcook it and cut against the grain.

A 1.75 lb. sirloin is still an under $10/person meal. CHIEF

Better than brisket for chopped sammiches. fraction of the price, cook in half the time, don't have to worry about leftovers, etc.

November 8Nov 8 Wagyu is overrated. The people that obsess over it don’t know shit about good meat and just tout its merits because it’s expensive. Sorry.

Wagyu is not overrated in some forms/cuts. It needs to be graded higher than prime and the marble score needs to be high for it to matter.

I was ready to leave when I finally looked up, and still at the door were several large, dirty men wearing obvious scowls. Now I wish I hadn’t offered to close up alone. Closed, I yell sternly, at who i would later come to understand were roadies. That is when the one nearest the door holds up a sandwich sized ziploc bag with a not unsubstantial amount of white powder. I pause.

I honestly haven't felt it as much as I thought I would on the tailgates. The per head cost has gone up, but as a cost component it's still pretty low per head. I do agree that the prices are insane, it feels like the higher end briskets (prime, grass fed or wagyu) have gone up less relative to the choice briskets.

The “point” of brisket was always that it’s a tough, shitty cut of meat that is only easily served after rendering tons of fat. It was originally leftover cuts nobody wanted. Same with ribs. Now it’s been elevated to a status that prices are on par with loins. Agree on pork. It’s always the go to when you do t have a ton of time and don’t want to break the bank.
