That certainly wouldn't be bad, but IMHO, the highest and best use of leftover cornbread dressing at breakfast is to crisp it up in an skillet and break some eggs over it for a cornbread dressing scramble. There's no rules!

November 26, 20223 yr Popular Post Leftover turkey and andouille sausage gumbo went down tonight. Roux was dark but broth lightened it up more than I would have thought. Still damn good.
November 26, 20223 yr Also I used Maggi instead of woosty. And extra hot Louisiana sauce. Dropped the usual trinity into the roux but also sautéed a red onion and a head of garlic and added that when I started to fold in the stock.

Also hash browns are great in the waffle iron.

November 27, 20223 yr also my first! stock with the carcass plus a good amount of the turkey base liquid from the roasting pan, i had dry-brined the bird so it was nice and salty. i didn't want to go to the store and i only had a red bp...otherwise i just followed my seafood recipe. i did add a few dashes of worcestershire sauce, saw that mentioned and thought it sounded interesting, and since i've only ever done seafood gumbo before anyway, why not. a little taste of home while cooking 🧡🤘... yeah, WAY better than turkey soup 😛😃

December 7, 20223 yr Gonna document this recipe here cause this turned out pretty good and I might get laid tonight. I have yet to make a gumbo where I did not wish I took the roux darker. Founded around the Mrs Bs recipe:http://www.mrbsbistro.com/recipes_gumbo.php 3c oil/3c flour to make the roux, cooked in the oven a good bit of the way, finished on the stove top 2 onions 3 bell peppers 6 celery stalks 8 qts chicken stock, 6 made with the carcasses of the rotisserie chickens, 2 qts to supplement 3 links of sausage ~ 2 lbs 2 rotisserie chickens, could easily go to 3 2 tbsp creole seasoning 2 tsp black pepper kosher salt (recipe linked is too oversalted imo with the creole seasoning, so i just add to taste, very little). 1.5 tsp red pepper flakes 1.5 tsp light chili powder 1.5 tsp thyme 2 tbsp minced garlic 2 bay leaves 10 dashes of worsty sauce, based on this thread guidance Sausage in for an hour or so, chicken for another 30 minutes, added a bag of frozen okra and took it another 10 or so. The regular (party time) is great on a bun / tortilla.

November 17, 20232 yr Made gumbo last night. My wife was grossed out that I ate it Cajun style with a scoop of potato salad instead of rice. Once you go potato salad, you don't go back.
