  • I smoked a 12 lb and my dad roasted a 22 lb. His might be the prettiest turkey I’ve ever seen, but my smoked turkey seemed to get the most compliments. I think that may have more to do with the folks

    I just took this off the smoker. It’s a backup turkey for the dinner tomorrow at a friend’s place up on the Allegheny. It looks good and smells better.

Brine-thaw update: bird is fully thawed and the thermo read 40F this morning. I tossed in a fresh scoop of ice to keep it below 40 and it's chilling until a little later this afternoon. Really excited to see how it turns out

Getting there.  Breasts are ready for the wrap.  Started on the pellet grill, but it's under 20 here, so switched to the 26 kettle.

A little too much smoke maybe, but juice poured out when I removed the probe, so should be juicy.

Turned out great and moist and delicious. The truss wasn't that hard to do and the skin was delicious and crispy! Gravy turned out nice with all the root vegetables roasting in the drippings

Son said it was the best smoked turkey I’ve ever made (made about 6-7).  I’ll take it.

Drippings and milled vegetables from that process seriously elevate gravy.

Spatchcocked turkey turned out great once again.  Boneless breast was wrapped in the pick but was also very good.

Not sure which thread we discussed this in, but I inquired about the cost of turkey outside the US. In Scotland, the boy found one for £28, so not too bad. But in Germany….daughter couldn’t find one to order for less than €160, and she said fuck that. So, she’s making 5 large roasted chickens…and a goddamn tofurkey for her vegetarian housemate and friends (they’re doing Thanksgiving today, because she doesn’t have class on Fridays). FFS. A tofurkey.

Maybe she can call me on Friday when she has no class.
