August 10, 20241 yr Breakfast Taco: Potato and Egg with an initial smear of refried beans. No cheese. No meat (will make an exception for barbacoa). Accompanied by some hotter than hell abuela sauce (green or red).Potato egg and bean is my favorite. Sometimes I’ll add chorizo but only at the places that cook it into the eggs and potatoes.

When I lived in Portland there was lots of breakfast joints. Most had variations of this. Sometimes it was not a cake but just huge chunks of Dungeness crab tossed butter and chives. One place replaced the muffin with a fried green tomato, another with hash browns. Now I’m hungry!
