Back to basics.  Cheddar, bacon, and fried egg sammich.   Cured and smoked the bacon myself.

- Gulf reds in coconut cayenne rub

No kiddos at home. So I just made brunch for the wife and me. Green Chile cheese grits, scrambled eggs with green chiles and Dona sauce, crispy bacon, chocolate croissant.

Mother's Day Brunch.  Eggs Benedict.  Cayenne hollandaise.  "What's with the square bread?" you may ask?  We like the tortas sold at Costco for this application.

Went with a sloppy lasagna tonight - Shaved sweet potato in substitute for noodles, which I’m probably not doing again, but was a fun experiment.

Double sauced in an extra dish cause I’m a heathen…

Served with Mac Salad, Gorgonzola Salad and Garlic Bread.

Pouring down rain in Tulsa this morning and cool.  My caveman brain said ‘Chicken & Dumplings’ time.  The sun came out and the weather turned quite warm this afternoon but the craving and meal plan was set.

Good.  Damn good.

Time to start enjoying some cooler meals. My wife is trying to avoid acidity in foods but she loves a Caprese salad, so I used a Peach substitute.  Damned Delisions!

My wife had an idea that I am to execute. She wants eggs Benedict with fried green tomatoes for the base, poached egg, crab, bearnaise. I’ll post when I actually make it.

Nice.  I've never scored a shoulder like before.  I'm not sure if it would make for better rendering, but it sure is pretty.  At first glance I thought you were reducing the bark by doing that, but it might actually increase it a little.  I'll give it a try next time.

Little bucatini with lemon/white whine sauce and grilled chicken on top.   Onions, rosemary and tomatoes came from my garden.

Homegrown tomatoes

Browned and braised a nice chuck roast I grabbed at Randalls.  Leaned south of the border -- 2.5 lb chuck, 1 large onion, 1 roasted poblano, 1 jalapeno, 3 cloves garlic, 3 Roma tomatoes.  1 T each ancho, guajillo powders and 1 T cumin along with 1 T each coarse kosher salt and coarse ground black pepper on the chuck.  Braised in 3 cups chicken bone broth for 3 hours at 325 F.  Loaded up some HEB you-cook-em flour tortillas along with pico de gallo and cotija cheese.  Blanched and fried some seasoned russet potatoes.  Righteous dinner for 6.  Mix with tequila.  Don't skimp on the tequila.

Super quick Sunday night rack of lamb. So easy, just fire the grill and as soon as it’s hot plop the herb crusted lamb on the indirect side, close, and hot roast for about 25 minutes.  I could have pulled it maybe 3 minutes earlier as this crept close to medium.

Served with a garlic sauce, homemade baba ganoush, and gazpacho (not pictured) for the veggies.

Looks great.  I prefer lamb at medium.  Too chewy below that.

Salmon seared and finished with butter and garlic. Corn and squash salad with bell peppers.
