I put my cheese in the bottom of the hot crunchy taco shells before adding the meat. It melts and forms a glue that will hold the shells together if they happen to crack while eating them.
November 3, 20241 yr Something I’ve been enjoying lately is marinating whatever steak is on sale for 2-3 days, Lodge seasoned grill pan, and served with sides from Mendocino Farms. Their pasta salad and curry couscous are top notch.

November 9, 20241 yr Looks great! Spaghetti squash is a great substitute for pasta as well. Interesting that you used cast iron for this. I've always avoided highly acidic foods in cast iron. Then again, I've found that a lot of the pearl clutching about cast iron seasoning, cleaning, and cooking is overblown, so maybe this is just another example.
