Yeah, you can buy ridiculously overpriced ghee. Or you can just make it yourself because it’s super easy and inexpensive.

Sorry. I didn’t mean to hurt your feelings.

Happy New Year.

So defensive. Sounds like I hurt your feelings. Wtf do I care if you want to waste money on something that’s cheap and easy to make at home? Knock yourself out.

Wife called me today from Whole Paycheck and told me that they had boneless legs of lamb on sale for 7.99 so I told her to grab a couple and we would figure something out for dinner and or the freezer. Turns out she misread the label in the case, they were 11.99/lb, and didn't bother either watching them weigh it, read the tag, nor at the check out. Stupid shit wives do thread. Still slammed. 275 to temp and them finished at 500 in the oven.

Interestingly enough I almost bought the boneless leg of lamb at COSTCO yesterday. $4.99 a pound!  Usually I have been splitting and butterflying the leg to create the equivalent of two thin brisket size cuts.  Sear and then cook indirect.  Main thing is after all the immediate deliciousness you need to make a Shepards Pie with the leftovers!  It's almost as good as the first go round!

Yeah, Costco has lamb that always seems meaningfully cheaper than any of the grocery stores. Lamb chops or racks are offensively priced at HEB.

Blacked eye peas this morning.

Looks great., what’s in them? My NY peas are always pretty simple— bacon, salt pork, onion, garlic, salt and pepper.

Onion, jalapeños, celery, garlic, ham hocks, salt, pepper, thyme, cayenne, and a couple of bay leaves. Oh, and some chicken stock.

Made a traditional new years dinner here in Germany for our friends, before I subjected them to watching the Peach Bowl with me.

Had to bring canned blackeyes.

“Cooked” in as much as I ordered it from Goldbelly and reheated in my air fryer: the infamous signature Lou Will Lemon Pepper wings from Atlanta’s Magic City Kitchen that we ate while watching the Peach Bowl game plus another peach cobbler made my my wife. Delicious.

Stared this morning by rinsing and sorting black-eyed peas - eventually realizing that I was rinsing pinto beans.  Fuck.   Off to HEB for some actual black-eyed peas.

Peas and cornbread while watching the game.

Sous vide pork chops, bacon grease sautéed cabbage, and more black-eyed peas for dinner.

I didn’t get to eat Thanksgiving dinner - post covid sick as fuck. Christmas dinner was half way back but today it was on for real.

pot roast, skin on mashed potatoes, brown gravy, black eyeds, okra and it was money. Extra special because my mom and I made it after the horns won.

I added slivered almonds to my bowl. Been thinking of trying the Mediterranean Diet and this was one of the recipes.

Costco lamb is dirt cheap and high quality.

Celery, bell pepper, green onion, dill, Duke’s, lemon/lime juice (I like the bottled key lime in a pinch) and S&P.

family devoured it as they always do.

After all the holiday food, we wanted to switch it up with a mushroom pasta dish.  Sautéed chicken, baby belllas, onion (felt shallot would be too mild for this dish), minced garlic, basil, oregano, pepper, salt.  Reduced two cans of chicken stock and added heavy whipping cream for the sauce - left out the wine this time going for a more earthy flavor profile.  Fresh linguini.  Shredded Parmesan.  Italian parsley.  Simple but welcome after the onslaught of holiday standards.

H-E-B is $25/lb for ribs. Online Costco says $36/lb. Is it cheaper in the store?

Did Christmas with family in Texas and so decided to make a big dinner on the last day of my subsequent home vacation.  The situation here: herb-anchovy crusted leg of lamb, sweet and sour green beans with candied bacon, roast potatoes and lamb pan gravy, @jimmyjazz horseradish sauce.

a few fun things recently...

got home from two weeks in Texas on Christmas Eve...gumbo is our tradition, so had chopped, prepped and frozen everything before we left so i could get it together fast. home by 5... gumbo by 7 😊20241224_204433.thumb.jpg.4d0129a276b9702cf555b9ca86c68df2.jpg

Christmas morning is normally big family breakfast...but since it was just the two of us (first time in 28 years! 😮), we had brisket tacos on HEB bakery tortillas and kolaches, all painstakingly packaged and brought from Austin 😁20241225_100325.thumb.jpg.7cf252357e6ccaea97f3790ec6b48056.jpg

and i've never made picadillo before but i will def be making it again! served with more HEB tortillas bc i may have brought several packages home and stored them in my freezer 😜

20250107_195044.thumb.jpg.9d10c89402c63ac1e196105cacfb83d2.jpg

i was afraid it would taste very similar to chili since it shares several ingredients, but it in fact tasted completely different and was delicious!
