January 13Jan 13 no cooking... but we were gifted a fancy jar of salted caramel hot fudge for Christmas and i had a hankering to try it, but no ice cream. so i made some. basically just used some of my homemade creamer, ice, kosher salt, ziploc bags and some muscle. turned out great.

January 21Jan 21 Did a little mixed grill gyro rotisserie the other day, lamb and chicken. This is relatively easy and very yummy. Sub out the lamb with pork butt and this is a very low cost meal that will put leftovers back in the fridge for a few more passes.

January 22Jan 22 My ex and I used to take our kids camping at Garner State Park every Spring when they were little. We’d go to Neal’s at Concon our first night after setting up camp and I’d get the pepper steak every time. It’s awesome.

I grew up and San Antonio, but I've always known that as s a hamburger steak- pepper steak was a stir fry. Surprised I've never heard of that.

It was much easier than I expected - I mashed out two roughly 1/4lb hamburger patties in a rectangular shape, layered with diced fresh jalapenos with grated Colby/Jack cheese. Also, I had some shallots on hand and diced those up as well. Covered first patty and diced japs/shallots/cheese with second patty and pressed and sealed them together and threw them on the grill. Served with some brown gravy and mashed potatoes. Definitely doing it again soon.

The Cottonwood Inn in La Grange had that pepper steak (the one in the article) and it was awesome. Pretty sure it was called The Hallie’s Special. Miss that place.

If we passed thru early, it was breakfast at the BonTon Cafe; the Cottonwood Inn, if lunchtime. Miss those places, too. But, also when life was a bit slower and trips were quality family time.

INGREDIENTS Two ground-beef patties, about one-quarter to one-third pound each Seasoned salt of your choice A handful of grated cheddar cheese Pickled or raw jalapeños or serranos, sliced or diced DIRECTIONS Form two beef patties as you would for hamburgers. On one of the patties, place the cheese and peppers. Press the second patty on top to encase the cheese and peppers. Crimp the edges to contain the good stuff. Cook the steak on a grill or frying pan as you would a hamburger. Garnish with more grated cheddar, peppers, or chile con queso.
