Suadero Tacos

I get the meat at Poco Loco Supermercados.

Season with salt and confit with lard and some chorizo. I saved the fat from last batch and reused it today.

Easy confit: crock pot, 2 hours on high, 3 hours on low.

Braised lamb shanks, reduced the hell out of the sauce (beef stock, shallots, celery, garlic, and carrots, multiple sprigs of fresh thyme), add fresh English peas at the end, top with parsley.

i didn't cook any of this, but i went to the farmers market and i did a lot of chopping. thus...Mediterranean-ish chopped salad 😄

green leaf, arugula and iceberg, feta, red onion, salami/pepperoni/ham, diced fresh whole mozzarella and a bit of colby, banana peppers, kalamata olives, tomatoes, cucumber, red pepper, and fresh chopped basil and dill.

I wish I could eat pizza like I did before my 40s.  I still love a good pizza, but often end up feeling like shit after two slices.  It's not the gluten, because I consume a fair amount of that in other foods and have no problem.  And I regularly consume cheese, melted in tomato/meat mixtures and otherwise.

Man well what is it then you think? We still eat pizza 2-3x a month, we try to make it that’s fresh mozzarella, San marzano tomatoes, homemade dough, and then the pepperoni that’s def no good. But for pizza it’s about as good as you can hope it to be with zero additives in the base pizza. And I had no business drinking on Monday but she wanted wine and it was a bottle and varietal that I had never tried so I was weak. Turned into a lovely calm evening though so it was worth it.

no but she wants one. sometimes she cooked on the ceramic outdoor but honestly it's best just in the oven. she's gotten really good at the crust, I rarely eat the pizza bones when I have pizza but I eat all of hers.

Should have hit me up.  I still have a gallon of frozen shrimp stock leftover from when I made etouffe a couple of months ago.  I'm at the point where I would pay someone to take this off my hands, and I can't bear to throw it out.

Do you notice a difference between homemade sourdough, higher end pizza joints, and the lower end places. My guess is the dough process and the ferment time is involved, but that's just a guess.

I’d be better off with that but “we” made fried chimichangas for a Saturday night. Rotisserie chicken, green onion, salsa verde, Monterey Jack, refried beans and topped with homemade cilantro jalapeño ranch dressing and homemade guac and pico.

HEB fresh made burrito tortillas are a godsend.

Cooked up some of Matt Martinez chicken chile verde enchiladas. Took way more time and I’d use stronger corn tortillas next time, but absolutely delicious.
