Cook, continually whisking the eggs, until they thicken yet are still very creamy and not completely set. Whisk in the crème fraîche and cook for a few seconds longer. Spoon the eggs onto warm serving plates and serve immediately. Serves 2. I'll see if I can pull it off this weekend and will report. But jesus, such a simple thing, and they were so good. You and I make eggs exactly the same but I will go a hit higher on heat and just scrape and flip the eggs gently and a bit more often. I’m told in no uncertain terms to make breakfast tacos on the weekends, I have no other choice or options. recently I’ve moved from butter to flavorless avocado oil for health reasons, I think the butter ones taste better but not by much, a quality egg, modestly salted and properly scrambled has a rich yet delicate flavor that can stand alone.

July 30Jul 30 Popular Post Plating is spotty and I forgot to take a picture before but pretty damn good. Peach jalapeño glazed pork chop (bone-in of course). Got a little above medium but still juicy. Southern church style green beans. Ginger dressing on salad. Rest is from the store.

I think I've posted about it in the steak thread, but we have some friends who will do this with multiple steaks for a greater multiple of people and ration out slices. Joke was on the last time when they told us to bring the kids. My kids went back for seconds and thirds and murdered any idea they may have had for leftovers.

August 2Aug 2 A weekend breakfast tradition like no other …. Since at least 2003… troph’s breakfast tacos. I mixed it up and used the HEB southwestern tortillas for myself this morning. Everyone else choose the regular flour tortillas. when ramblyn and I started dating she told me if we didn’t work out and I I’d to go online and use the platforms that I should lead with “breakfast tacos every weekend” and my peeps still pretty much soft demand them weekly. Reminds me (not food related) when my second son was born and my sister in law came down to help out and I was gassed, on fumes, needed a nap in the worst way. My then wife asleep in worse shape than me. SiL walks in the door says she’s here to help after she naps because the drive took it out of her. My ex father in law drove her. As in, even if unexpected, I can hit the fridge and pantry and make a meal that is going to leave everyone happy and satisfied, and almost certainly yield leftovers. People come over, and you feed them. If you KNOW you're going to need to feed people for dinner....FFS. It's not hard. My wife even gets on me when I prepare "way too much food," but I will proudly go to my grave knowing that nobody will EVER leave a planned dinner at my home thinking "man, why didn't he have enough food for everyone?" While I've managed that on occasion, it's stressful and could catch one low on stock. But the deliberate invitation of two couples with four children instructed not to eat prior to showing up is a bridge too far and incomprehensible. Even more so that they ate the majority of the food prior to your arrival. Makes one wonder if they're in the early stage of dementia or mental decline. So as not to be totally off-topic, here's some breakfast tacos I made today with HEB Hatch Chorizo. Salsa is homemade. Tortillas from HEB bakery. Double meat cheeseburger with mustard, grilled onions & mushrooms, pickled jalapenos, lettuce & tomatoes from yesterday evening served with a mug of Founders Porter.
