Then, whatever you do, DO NOT ADD ANY SPICES.” I mean, it looks good enough….but could be improved with some diced jalapeño with the peppers. They have been flooding my reels for some reason, and they are all some form of braised meat and gravy over rice. With that said, the one for pork chops is damn good.

That said, he found THE mexican grocery in Glasgow (yeah, they know him there), where he can obtain the ingredients he needs. Braised the beef all day, tacos dorados on the griddle, with homemeade salsa. And a jarritos de pina, of course.

November 7Nov 7 I used to make this a lot and then forgot it. Escabiche used to be a mainstay of TexMex joints. You’d get a bowl of it with your chips and hot sauce. I like it with mostly onions and carrots, and the jalapeños sliced instead of whole. Yeah they’re seeded. I don’t like pickled pepper placenta. And it’s easier to eat.

November 8Nov 8 It’s in the brine in my container. If serving I’d spoon into a strainer over a bowl and return the brine to the container, the put the product in the serving dish. It’s mainly vinegar seasoned with cumin seeds, Mexican oregano, garlic, black pepper, and of course the veg. If I still drank I’d use it in a dirty martini.

November 9Nov 9 Most important question…..Did his lady friend like it? Alas, she’s back in Germany. But apparently…she’s coming to Scotland for a visit soon. This is his first serious girlfriend. We’ll see how it goes. He’s had an amusing time introducing her to Mexican and American food. He took her on a date to a real-deal bbq restaurant in Frankfurt (we got a brisket from there last year, and he was legit), and she loved it. But she also couldn’t figure out the right way to eat a pop-tart, so…it’s a process.

November 10Nov 10 I live a slow simmered New Mexico green chile pork stew made with braised shoulder. I had bought some ground pork, and I had some poblanos turning. So I made a quick green chile with the ground pork and a pound of ground venison. Basically a couple onions, chopped peeled poblanos, cumin, 28 oz green chile, broth, taters. It came out great and took less than a half hour to make.

November 21Nov 21 So I did the skillet thighs. Threw some halved small potatoes in with some rosemary. Such a tasty, easy, warming dish.
