Agree. Those look awesome. But flour tortillas take on a spongy texture with enchiladas that I don’t like. Still looks great and would hammer that plate.

Yeah that’s true and I thought we had corn as I headed to the store and came home disappointed. That said, the broiler did some work on the flour and they were tasty af.

Pork butt for pulled pork sandwiches for the game watching party. This is at 180. I wrapped it at 190 and took it off the BGE at 205. As opposed to the game, it was excellent.

By that rationale, you're pretty much saying tomatoes are better and more important than bacon.  And that is simply not true.  Regardless of whether we're talking BLT's or what,.

If you have to emphasize bacon on your BLT, it's because your maters aren't fresh.

you can get excellent bacon year round

that is not the case w/ tomatoes. 

i love BTL's but there are very few things that i love more than a perfect BLT with amazing tomatoes...

Wife was sick so I made her some homemade chicken noodle soup.  Pretty damn good for just winging it...

Had some leftover fried chicken.

Used the bones and breading to create a broth.  I see them do this on the cooking channel all the time, so I figured why not.  Worked pretty well.

Cooked in homemade broth (plus some plain water and chicken stock from a box) and added some fresh basil just because I had it for a really long time before adding noodles and chicken so as not to over cook them.

This guy knows what's what.  There was more sauce in the pan.  It ended up on my plate and then in my belly.

Took a run at some Brown Butter Gnocchi for the first time.

Did it with guanciale.  I've heard it's better than pancetta, but I've never cooked with it before.  It was a better texture and overall just felt like a better cut of meat (and fat), but it was a lot saltier.  It's not super easy to find so I just took whatever they had at my local Italian grocer, but I wonder if with a little more research, I could find some that wasn't cured so heavily in salt.  Anyway, I figured it out pretty quickly in the process, so I just adjusted accordingly and kept my salt levels low throughout everything else.

Each piece was about a half pound and I only used one as I didn't want to overpower it with too much.

Cubed the guanciale and prepped about half an onion, some garlic and some mushrooms.

In one pan on low heat, melted about a stick and a half of butter and infused it with some garlic cloves and fresh basil.  I think you're supposed to use sage leaves here, but I only had basil so I went with it, just something to brighten it up a little.

In a separate pan, sauteed guanciale, onions, mushrooms and garlic.

After dropping the gnocchi in boiling water for about 3 minutes, strained and added to brown butter after removing basil and garlic cloves.

Bring it up to medium heat, add the meat and shrooms and let it all cook together.  I also hit it with a squirt of lemon here which was a much needed pop of acidity.  This is a really rich, rustic dish and upon tasting, it needed to be brightened up a little.  The squirt of lemon was the perfect balance.

Serve with a little fresh basil and of course...fresh grated parmigiano reggiano.

Still trying to make this dish better. This time squid ink risotto with fresh summer truffles and bay scallops.

Man, I didn’t even take any pics. Just made straight up carnitas tacos. Slow roasted pork rubbed with oil and salt, roasted to lightly crisp exterior, then rough chopped it in with some of the pan crispies/drippings. Grabbed some fresh tortillas from the Mexican grocery yesterday, heated on the griddle. Make tacos with carnitas, smear of avocado, salsa verde, fresh onions and cilantro, and a squeeze of lime. It’s the pure simplicity that makes it great.
