I don’t think you can compare a restaurant gravy to home gravy, there is absolutely no telling what they might be doing, or it could even be a packet. Any used fat, oil or grease and flour will make a good gravy. The “paste” comes from not cooking the flour enough while making the roux, you have to cook the flour down before adding the milk. Roughly equal parts of flour/grease cooked thru, milk and S&P.
Thought about stopping by The Shed BBQ in Abilene tomorrow for lunch. Went online to check their hours, while looking around, noticed their brisket was $30/lb. Fuck!
Allen’s in Sweetwater is badass, family style, share a table joint with incredible food. Coleman, Texas has great pizza if you go that way on the way back.
Finally getting this wrapped up. Started in September, held off on completion until the temps warmed up. Started filling it last Friday, we used water truck for better water quality and for the convenience. Eight trucks later she is full. Now we can start on the yard.
Big fan of Mary’s as well. I have heard New York Hill in Thurber, Texas is better than Mary’s. Anyone been to Thurber? It’s just down I-20 from Strawn.
Ate lunch at WB today. Ordered a #2 and a grilled cheese. They told me the grilled cheese is no longer available. She went on to explain that they could get me two pieces of Texas toast and two cheese slices if I really wanted one, it wouldn’t be put together though.
