We do have an account at BEK but mostly use Sysco and PFG. This would just be for my personal use at home, push come to shove I can just go to “will call” at BEK and pick em up.
I have a large commercial freezer in my barn/shop and could just freeze whatever I didn’t smoke. How long would the cheeks take at 250-275°?
I have a burger joint, maybe they will sell to me that way. We don’t do bbq, I figured all of their bbq cuts went to those already established with them. I will call and see. I have never even looked or them in retail stores, figured it was like hangar steak and you had to get a butcher to save it for you. So much of the odd and ends gets ground into burger meat. I will start the search.

Wife just informed me that we will be cooking for a rehearsal dinner of about 50 folks this coming Fall. I’m not looking forward to it, I have never done any cook even remotely close to that many people.

The hospice nurse told my wife and the family my FIL will be much better situated after 3 weeks, I guess that’s the typical adjustment period. My FIL is on day 12, he didn’t do well the first few nights he was there. Some of the things they do are comical and heartbreaking all at the same time. My prayers to all of those dealing with this horrible disease.
We just placed my FIL in a home to help with his care, he’s in stage 7 according to all the info I have read.
It’s sad to watch, hate this for my wife and the entire family.
Looks like John Lewis has called out Moberg for copying his smokers. Instagram post said Lewis challenged him to a cook off. It will be interesting to see how this plays out.
Yes that’s it, magnalite. I hear that’s the Cajun pot of choice, I bought one but have never used it. We always use the Le Cruset, feels safer since it’s so much heavier and easier to control the heat.
I ate at Helberg’s on Wednesday, it was good but not out of this world good. I had the lean brisket which needed more salt. They had two different types of sausage, one was a beef sausage and one was a pablano and cheese. The beef one was very greasy and had lots of seasoning that I assume was chili powder, it was over seasoned to me. The poblano one was better to me.
