  4. pretty easy to roast in the oven and it is delicious, better than those overcooked things from HEB (and I buy those on occasion, too). I think the key is to buy smaller birds (we get them at Whole Foods). I like to put lemon in cavity and some butter under the skin. healthy does of salt and Boom.
  5. you may be right. I was assuming advisor and legal fees to be huge on the fundings. if all private placement as you say, then maybe not as much. usually in these deals (my knowledge is limited, admittedly), initial investors are releasing stakes to the following groups.
  6. so advisors and lawyers weren't billing their time during those rounds of fundraising? certain investors weren't selling their stakes or portions of in those rounds? I'm not involved but would be surprised if either of the above were not true.

  12. A friend did these with his daughter. it wasn't girl scouts it was through the YMCA. He told me the first year a few guys brought some stuff. He said the 2nd year it was like a frat party, they had booze everywhere and most of the dads spent 48 hours completely hammered. said it was pretty hilarious.

    I've had a lot of awful hill country wine. Just saying there are some producers doing much better work recently than even 5 years ago. QPR still isn't great.

    First, I wasn't comparing any Texas wine to Spottswoode or stuff like that in Napa. Secondly, regarding ageability, who knows, as that story has a long way to go to be told for Texas wines. In general I would agree with you, but Texas wine making is in its infancy. a lot of Napa wine, even some pretty high end stuff, has some heavy handed manipulation. There are a lot of processes to manipulate color, alc levels, acidity, etc. Obviously, many don't, too, but the large scale production stuff I'm talking about.

    horribad is a bit strong. lots more serious winemakers and growers now than even just 5 years ago. fairly rapid progress. lots of shit in Cali, too, they just spend a lot of money on additives and manipulations to get that awesome spiked grape juice America so loves.

    Good list. I'd add Inwood. Calais can be interesting, too, if you get a reservation/time. Right now, best Texas wines I had were some viognier blends and mourvedre from high plains. I did taste some wines from Fall Creek recently, mostly grown fruit in Hill Country and I thought they were pretty darn good. Not sure on price point.
