Of you're asking me then yes it was on a vision grill smoker. I let the temp start lower and creep up to 285. It was a 9 hour smoke and pretty much stayed right at 285 for six of it. The rest of the time it hovered +\- 20 degrees until I got it locked in fiddling with the upper and lower vents. I used a mix of hickory and oak chips which seemed to work well for the flavor.
Smoked a 4 lb beef rib rack for the game yesterday and it tuned out fantastic. First time doing a beef rib but went with the Aaron Franklin method.
Shout out to Rudolph's in Deep Ellum. I called 6 different places before finding a butcher that actually had some in.
Slathered with Louisiana hot sauce and equal parts salt and pepper for the rub.
Bout 5 hours in checked it and spritzed with some water to keep the ends from burning

It's bizarre because the most success they've had in the last 40 years was with Carroll who wasn't a trojan.
Carroll was also just coming off of being fired in the NFL and was largely given the Red McCombs to Charlie Strong treatment until he started winning.
Even more telling is the instincts to try to get the ball immediately after delivering such a devastating hit, he didn't even think just pounced on it.
Bumping this thread because the wife and I will be headed to Philly in mid December for about 3.5 days. I'll be at the Loews Hotel in the PSFS building so any cool shit within walking or a quick Uber ride would be appreciated.
We're hitting up Blue Cross River Rink and a couple of the restaurants there but looking for some other good times, pubs, historical areas worth going.
