At one time La Familia was one of the best operated restaurants I’ve ever eaten at. We ate there often when we moved back in the mid 00’s. The owner ran front of house like a machine, greeted every customer at the door and after a few visits knew your name. Service was impeccable, like a high end fine dining joint, and the food was the best TexMex I ever ate, and his grilled items were fantastic. usual story. He ran it like el jefe and didn’t really delegate, so when he got sick the family fucked it up. It declined and they sold it but it was never the same.

Campo Verde was a weird joint. Ate there back in the 80’s and it was the worst fucking Mexican food I ever ate. That includes Mexican food in Wisconsin and Massachusetts. It wasnt TexMex, or any regional Mexican; it was like something made on Mars in the 60’s. Got dragged back around 08 by someone saying “oh they fixed it; it’s yummy now!”. Not. By then they had loaded it with filthy christmas decorations that launched big dust bunnies when the ac came on, and the food still sucked. Also they allowed smoking because it’s Pantego. It reeked. They closed it down even though there is this weirdo contingent of superfans who loved the Christmas lights. so last year moose benhamacht bought it and cleaned it up. The building should have been condemned probably. He owns the excellent Cafe Americano in Arlington. He cleaned it up, kept about half the lights, and the train, and brought a new menu of more expensive Mex Tex and Mexican influenced dishes. Of course the OGs who flooded the place on its reopening in May pissed all over it. so he’s always a tweaker on his concepts; yanking losers off his menu and trying new shit fairly quickly. So he’s figured out that he underestimated the problems with the old clientele and their shitty tastebuds and decided to milk it thru Christmas then shut down and do a total remodel for a new unknown concept in 26. it’s the same issue with the folks that bought Pulidos and Margie’s, changing recipes and the menus. You can’t by some brands and change them. If someone bought Joe T’s and made a change it would be a disaster. But cattleman’s benefitted from Taylor Sheridan’s acquisition.- Next Gen Chef on Netflix

We binged it thru all of the eps. The finale is Wednesday. I would have liked an episode on the CIA and then one doing background of the contestants, showing them in their current situations. One is a chef for the NY Jets, various exec chefs and sous chefs with serious CVs, and some private chefs. It was hard to get a feel for them in the show. the show is good but some of these cooks are out of their league compared to others. I would perhaps liked it with a bit older folks as some of them were really immature in terms of cooking and hospitality. Best ep is the brigade one where they run a restaurant and get all kinds of curveballs. I thought about going to cia and my old man had me do some work in fancy joints in Memphis. Back then these dudes worked like dogs for no money. After a few weeks washing pans, prepping shit, and a little line work when slammed I decided on college. i did not know they have a campus in San Antonio. I’m not jumping Jerry’s leg because I was against him paying him the $40 mil that was offered. He should have been traded for picks back before the draft. You can’t pay three guys half the cap, especially when one is a basket case mentally before any truly big game, and a head case pass rusher who lacks the stamina for a 20 game season, has one playoff sack, and can’t defend the run. this D can’t stop the run which is the primary requirement of championship defense in the nfl. 11 was part of that failure four four seasons. Scheme alone can’t stop the run but one can manufacture pressure, as Eberflus did in the second half. Im glad he’s gone. I believed for the past couple years they should have traded either CeeDee or Micah. Micah is not worth $47 mil a year; he’s not shown a dominating presence in four years; he’s weak against the run, and is often out of place.
