  1. Is this a reduction from 3 bowls (flour, egg wash, breading) to 2 (floured egg wash, breading) or from 3 to 1 (just the floured egg wash)? When I type it out, it has to be the former, but I'll still ask.
  2. Typing quickly... I only did the simmering in the oven after it was combined on the stove.
  3. Cooked it all in the oven at 300. Turned out well. Added the crispy chicken skins at the table.
  4. Drip vs. LT in week 1 according to KXAN. Hopefully we get a few other good non-district matchups.
  5. Drip with Austin ISD, Hays CISD, and Del Valle. Pretty lucky given the loss of a top heavy roster last year. No LT, WL, or Vandy and 2 of Austin High, Hays, and Akins will be needed to put them in D1. Leander ISD into Region 3. Edit... but maybe not lucky because the WL/LT and annual non-district Vandy games prep the team well for the playoffs.

  10. I do both generally. About 3/4 reserved and added in at the last 10 minutes the rest chopped up fine and simmered.
  11. Like I said, they were really good. I got a "Beef Cheeks" hat. With modern high end bbq, the distance between floor and ceiling is so small that getting that perfect bite surpassing all expectations is damn near impossible. My three top "rave about Texas BBQ" moments, (nostalgia rearing it's ugly head): Late 80's first time at Kreuz, original location, after a cold morning of quail hunting. Some place driving home from the 2005 game in College Station, got 2 sliced brisket sandwiches that still stick out in my mind. JM Meat Co. beef rib and squash casserole These three were so far above expectations that it's hard to compare to the modern stuff. I doubt the first 2 could stand up to a L&L beef cheek in a side by side taste test, yet in my mind they were better.
  12. Made a trip to Leroy & Lewis. I would consider it a very high floor trip. Everything was really good, but nothing was so damn good I had to rave about it. Partner and I shared cheeks, flat iron, brisket, whole hog, bacon rib, hash, papas, cauliflower burnt ends, and carrots. The "bacon rib" is the best marketing for a slice of pork belly I've ever seen. By the time we sat and ate, the hash and papas were cold, not a big deal, but would like to try them hot. Will def go back for a burger, Italian beef, and other anytime options.
  13. When I was a kid apparently my favorite meal at the Deutsches Museum in Munich was gulashsuppe. My dad still buys me these occasionally. I got some Hungarian Paprika and decided to make it from scratch. Instead of sirloin or chuck as mentioned in most recipes, I used oxtails and cheeks. It came out delicious and rich. Partner made her fresh bread recipe. Next time, I'll just use the oxtails and add some potatoes and carrots.
  14. My cheap HEB was choice. I'm generally happy with choice for rib roasts. Plenty of fat in the cut still. Dry brining my 4 rib now. Going to reverse sear this year instead of sous vide. Got a bunch of beef neck bones to make a stock for gravy for the mashed potatoes and a demi-glace.
  15. Thanks!! I stopped in Waxahachie on the way back from HS FB championships in Dallas. 5.77 is way better than 19.99 per pound in Drip.
