Are you going to shit can everything on the boat and start from scratch? How big of an engine and are the gauges specific to the outboard? Do you need/want a new switch panel on the console? For a Tracker I would expect you would have 1 battery for engine and starting and 1 or two batteries for the trolling motor.
The diagram below is pretty typical for a single start and a separate house battery. With the switch, you can use the house battery to start the boat if the start battery dies. This is pretty much how my boat is set up except I have an additional charging circuit to charge the house battery from the engine. If your engine doesn’t have a separate circuit you can add an automatic charging relay that energizes when the first battery is charged and allows the house battery to be charged.
It would be a little different if you are adding a trolling motor batteries to the system. I generally put trolling batteries on their own circuit but you can use an ACR to charge them too.

Can you upload it from the ipad to dropbox, google drive, etc and then back down to the PC? I do this all the time for videos and pictures off my phone or ipad.
We've had better luck in cleaning the black tank after driving around a while. We have a dump at our storage facility and when we have boondocked we come back and dump there. Seems like it gets stirred up and everthing cleans out well compared to leaving a state park and drive 100 yards to the section dump station. Last state park trip we drove around the place looking at other sites for a bit before we went to dump. A lot of forums and groups have posts about people prepping their tanks with dawn dishwashing soap and calgon liquid water softener. I'm sure you can google to find info on exactly what others are using.
Looks good, that will probably be there longer than the house. I would probably just sister a 2x2 or 2x4 along side the joist where the deck plywood hits short but if it bothers you just cut the deck. I assume that the deck isn't more than 16' long so you would have to make a cut anyway.
Growing up in Tyler, we used to fish Holbrook if we didn’t feel like driving all the way to Fork when we got tired of Lake Tyler or Palestine. Just about any lake is a good fishing lake if you fish it enough to pattern the fish.
I don’t think any of the campgrounds in BBNP or the state park have hookups. There are a several RV campgrounds outside the park in SB/Ter but haven’t ever stayed at any of them. That whole area is an Oct-April destination IMO. Hit Colorado, the Frio or the beach in the summer.
