  1. Yeah, tried that and it doesn’t work as well. If it’s vacuum-sealed, it works great to do the sous vide (or redneck sous vide), then firm up just a bit on the smoker. I use a Traeger (yes, I’m lazy, so flame away), so it’s really easy to do a short smoke.
  2. Little Katana or Blue Fish, both in LC

Reminds me of when members of the Soviet Politburo (or even the Premier) would suddenly become ill and never be seen again We can hope...
  4. Reheat in the bag in warm water, then firm up the bark with a low temp smoke

Bodacious. Stanley’s is really good, but go for Bodacious (I assume you are referring to the Bodacious on Mobberly in Longview).

Oh yeah — and anything we should make sure to do/see?

Heading there next month. Staying at the Ritz, so Palm Beach/Northwest side. Anyone have restaurant recommendations?
  8. No, but it was apparent pretty quickly last year (2017 season) that the roster was a house of cards. Daniels has made some trades the past 2 seasons, with very minimal returns. Th patchwork they tried this year was a disaster. The best talent is lower-level minor league so still 2+ years away for the most part, and just treading water and winning 40% of your games (and winding up with mid-round draft choices) isn’t the answer.
  9. As I recall, the strong rumors at the time involved cocaine and strippers. He had tested positive for cocaine a few years earlier
  10. Would have been better off going full Astro a couple of years ago. This team will still not be contending in 2 years, mainly because they are well in the lower tier of AL talent and their top prospects are still (for the most part) a couple of years away. Even then, they are thin.
  11. Just ahead of getting fired...

Only “fast” at Sunday Brunch (awesome, by the way)

Now I’m hungry for one of their 4-meat Sampler Plates (“No Sides”)
  14. This is a fairly accurate description. And he’s right — Austin lacks true high-end hotels.
  15. No on pastrami and corned beef -- never really liked those. Will agree with you on using it in chili and burgers. I was (1) joking with you and (2) referring to cooking a whole, not uses for grinding it up
  16. Doorstop, large paperweight, weapon (when frozen), pothole filler Otherwise, only good use is when properly smoked.
  17. Listen to "Polkas on 45" https://www.youtube.com/watch?v=oS5Dc6u1j8o
  18. Again: he started the year coming off mono, had lost weight, and was unable to use December to fine tune for the year (actually, from what I read, he was basically unable to do anything golf-wise for a few weeks). He was off from the start and never was able to right the ship.
  19. Lousy, wet chug. Daly would never have spilled
  20. Had an odd season. He never seemed to really recover from the 6-ish weeks off (and weight loss, etc.) he had in Nov/Dec due to mono.
  21. Very underappreciated band
  22. As a RIce grad I can say that his pool of talent from which to choose for Rice was markedly different from what he will have to choose from for UT. Bailiff was about the best he could do at the time, especially after Graham left unexpectedly after saying he was staying. CDC should (assuming he has the $$$) be able to step up.
