Tournament of Champions thread
Here’s my bracket. So far my only miss was miller over Garces. I’m glad to see Garces gone; he’s always been a dick. I’ve got Izard over Voltaggio. If she wins she’ll be the only Iron Chef that’s also ToC champ, and Top Chef winner. She is a badass. Guy needs to drop some of these retreads. Christa Luedtke is terrible; looks like Gordon Ramsay and Blais spawned a wig. Mularkey is terrible but is on everything FN as he gets the Guy rehab project like he did Tiffani Faison. All I see is that she’s the “I’m not your bitch, bitch” bitch. At least no Petroni and Aaron May lost in qualifiers. I would have liked folks like Brian Voltaggio, Waxman, Sheldon Simeon, and Sara Bradley. I’d like a 64 team playin, random seeds. Most annoying: Guy with his fucking Chris Berman nicknames for everyone. And using them over and over. “Sweet T!”, “Dancing Spice Queen!”, “Shenanigans!” Fuck enough already!

True Detective: Night Country (Season 4)
I figured as the parade of cleaning ladies paraded into the meeting with dancers and Navarro for storytime, we would have tie ins to every other maid, butler, and cleaning lady ever on Tv. Hazel, Mr French, Rosie from the Jetsons, Ann B Davis, Florida, Albert, Benson, Daphne, and Rochester all to parade in.

That’s her father in law that her husband shotted.

Sex musk. I wish they had done the whole ep as that dinner party. Cheryl Hines is looking mighty fine these days.

True Detective: Night Country (Season 4)
The tongue? Did they answer who cut her tongue out? Was it Hank? Why? Stupid. WTF was the discovery that would save humanity? That required “more pollution from the mine”. Wouldn’t the govt have run that under DARPA and turned it into an Area 51 type compound and moved the town? That whole scenario was stupid. So they shut it all down and the town will die as the only other job is indigenous seal hunting. A hatch to the ice cave lab? Huh? 15 years down there and it’s run with extension cords and patio lights? They’d have an elevator. Wouldn’t they? Rose. WTF was she doing there actually? . She’s like Winston Wolf. The cleaner for the town? And did Navarro go on the ice or did she live with Danvers? We laughed thru most of it. A revolt of the cleaning ladies. And WTF was that tiny house the head janitor killer live in but it was like 40 women lived in there. Fucking shame.

Fort Worth is exploding
I dont get the Papi’s adoration. If I’m in fucking shitberg Elizabethton Pennsatucky it might be ok. Or fucking Iowa. But not in these parts. A. It’s from fucking Kentucky. They eat fucking sheep barbecue. That should tell you all you need to know. They fuck sheep then barbecue them. B. Fish tacos made with tilapia. A farmed ratfish. C. Barbacoa is described as steamed beef. WTF is that. Anyway I tried it as I was driving past. Oh that got some hype on surly. Got asada, adobado, and chorizo and might as well been the same thing. Little flavor. I kicked myself as there were better more real options around. They won’t make Christmas.

2024 Crawfish Season (or lack thereof)
I don’t understand the infatuation with crawfish. I’ve been eating them for 40 years going back to college as a couple fraternity brothers from Nola would bring up 1000 lbs (about 25 cents lb then). But when you have access to cheap gulf shrimp, the finest on earth, why spend $15/lb for bugs? Have shrimp and crab boil.

What the fuck as I smoking?. Yep RA is on Netflix. First 2 seasons.

Soup, Stew, Chili, Gumbo (Cold weather eats)
Wife bought two six packs at Sam’s a while back. Don’t know when we’ll plow through it. It’s not the same. You really have to doctor it up.

Texas BBQ
The crazy increase in overhead with folks building massive structures with big staffs is dumb too. No enterprise has more negative factors impacting profitability. Food costs, labor, fuel, rent, everything just costs more. Growing up most Texas barbecue was a roadside shack with an old dude selling some “beef” (what was it? Shoulder clods? Brisket? Knuckles?), chicken, and sausage. Bags of chips on a rack. Cokes in an ancient machine that were somehow colder than 32 but still liquid. That’s it. Or a diner in town that served it as a special on a plate lunch with vegetables. Or a little shop on the square or across the tracks on the black side of town. Always owner operated. I think there is a bubble busting. It’s not just the financial pressure. It’s hard fucking work. Derek Allen had award winning barbecue and opened a joint in the medical district (where Hurtado is now). He and his super hot wife ran it hard, and had to keep adding hours like breakfast, then evening hours, and it just burned him out. He shut it down blaming the lifestyle it inflicts. It’s why I respect the Goldee’s model. Three days. Open til sold out. Done.

If you were picking a train trip to do, what would you choose?
When we lived in Portland we went on several train trips. Got grounded from flying for a while so rode down the coast a couple times to the bay area and LA and it was great. Up to Seattle and Vancouver the across to Banff. Spectacular. Took one across the cascades and Rockies to Boise. The Denver to winter park is the way to go skiiing but it’s an hour. I wanted to do an Alaskan rail trip but we moved away.

My wife takes this occassionally to see the kids in the once area. It’s great. Big seat like first class. WiFi. Nice scenery. $28-36.

Texas BBQ
It’s fairly simple. Learn how to cook fucking choice or select grade briskets the way OG pit guys did it and still do it. Railhead and David’s sell very good sliced brisket for less than $20 a pound. Last time I was at Railhead the brisket was $17.50 lb. Chopped $13.50. Same as their great salami. And they have killer fries and ice cold beer. This is the way. Get back to roots smoking scraps and problem cuts expertly and give up all this crafts farm prime meat.

True Detective: Night Country (Season 4)
Word is HBO wanted 8-10 episodes and Lopez could only give them 6. Apparently this was originally a 21 minute episode of Twilight Zone that she had the inflate and conflate into this mess. Hence all these elaborate scenes, elk suicide. Long shots of darkness, plot dead ends. Etc. just a fucking mess.

The Andy Griffith Show
America was a better place when a man could make a living repairing radios, toasters, and lamps. And buy the wife a mink.

True Detective: Night Country (Season 4)
S4 doesn’t feel like a Max show. It’s more like a freshman film school project with a bigger budget.

Top Chef - Wisconsin
I believe Kish is Tom’s heir apparent when he leaves, and they bring in another to be the host. Glad immunity is gone. Here’s your truckload of Mountain Dew and PopTarts for winning the quickfire.

It’s like Aykroyd said; he never equaled funny like BassOMatic ever. “That’s great bass!”

Super Bowl LVII - Las Vegas
I can buy that he wanted to rest his defense that was out there forever. But you have to score a TD. So when they got close I thought the playcalling sucked and you gotta go for it on 4th down.

Netflix Recommendations
We just discovered Resident Alien last night and watched the first three eps. It’s like Northern Exposure with an alien theme. Enjoyed it. S3 debuts tonight.

Super Bowl LVII - Las Vegas
Won’t happen. I’m surprised they haven’t pushed it an hour later for all prime time. The networks like it where it is so they can stick a new show at the end to premiere. CBS launched Tracker. It kinda sucked.

I haven’t seen anything to rival “beloved aunt” in several seasons.

I hate these undeposited skippers. “I believe in this crew!” Fuck that. You know your bosun is a complete moron.
